Default Hooray for South Beach dinners!

Ok - I am so proud of myself - I cooked dinner. That is not something I do normally - but it's something I STRIVE to do - but I'm just not usually successful!

SO - I had to share - I took the leftover pork loin from last night (DH made it - not me) - and there were like 4 slices left - and so I smeared Laughing Cow cheese on each piece and stuck it in the microwave.

I cut the ends off of a bunch of asparagus and let Hayden put it in a pan and then I gave him a basting brush and a little olive oil and got him to coat them with the oil - so that kept him busy. Then, I let him shake salt and use the pepper grinder - and put them in the oven - he was so proud - lol.

And I made green peas for the boys. James and I both hate them - but the kids love them. Hayden used to love them with cheese when he was little - but I had not made them in a long while and I fixed them last week and he stirred it around on his plate and frowned and then said - innocent as ever "Is this poop?" - I about fell out of my chair trying to stifle a laugh. SO - no cheese this time! Just salt and pepper and Smart Balance!

Then, for the boys I broiled two whole grain english muffin halves with cheese on top of them - but I skipped those for me and DH who are only at Phase 1 of the beach!

SO - I am so so proud because everyone ATE it!!!! WOOHOOO!!! Even the kids ate a healthy dinner that did not involve chicken nuggets! I'm happy happy happy right now - and best of all - full. Although - I wish I'd of had DH and I a pound of asparagus each - because I topped it with parmesean cheese and it was to die for. I could have eaten the whole pan.

DH was so excited I cooked dinner!!

Ok - what did everyone ELSE make for dinner???

I (okay DH) made lemon-pepper salmon and chicken. And broccoli and carrots in a garlic seasoning. Oh, and we had a dinner salad as well. Congrats on cooking!

Congratulations! It is so much fun when you can fix healthy meals that kids love!

Last night we had South Beach Sloppy Joes on whole wheat sugarfree hamburger buns with three bean salad, deviled eggs and grapes for Brian.

Tonight I am fixing All-In-One Turkey soup. I've converted it to phase 2 and will probably cook some whole wheat egg noodles to go with it.

way to go Heather!! I've been cooking a ton since I joined the beach and am loving it also. I get a lot of ideas from watching 30 minute meals with Rachael Ray-and then I just SBD them up, but you know they're quick.

Tonight I made my chicken enchiladini's (in the recipe section), they smothered in black beans and onions and red peppers, etc so it's really a complete meal. DH will be thrilled when he comes home to something warm and yummy.

This afternoon I plan to cook up a storm. I need a break from studying and reading anything scientific for just 1/2 a day. I'm going to make SBD friendly spaghetti, italian veggie, chicken and turkey sausage soup, and finally cook those Mahi Mahi fillets that are just now defrosted in my fridge. Then I'm going to freeze it for use later nexk week so I don't get caught starving at 8pm with nothing OP to eat like I did last night. I love to cook it relaxes me! What's everyone else having tonight?

It's so nice to see a positive thread about cooking South Beach! Sure it may take a little longer than just grabbing a frozen meal but the rewards are so worth it.

I truly feel that cooking is a life skill that everyone, male and female, should acquire.

One thing - my oldest child does not like potatoes and he does not like mac and cheese - so I am really glad I am not having to fix that for the kids. My little one likes it - but he's only a year old and he was pleased as punch last night with a big bowl of green peas - with a few pieces of pork loin thrown in. If Hadyen was asking for mac and cheese or potatoes that would be hard for me to fix just for him and then pass up! But - since he doesn't like it - we didn't fix it - and I did not even miss it last night!! I bought 2 lbs of asparagus last night though - lol.

As a mom of 2 darling kids ages 5 & 8, I will tell you that you will see a huge difference in the way they act by eating healthy. My kids now only eat ww bread, natural PB, and all SBD friendly dinners...for all intensive purposes, they are on SBD too...other than they are aloud to eat junk from time to time, and still eat chips with lunch. They do not require as much sleep at night, they have more energy to play, enjoy going outside to play more rather than just watching tv or playing video games...This is such a healthy thing for your entire family. They will thank you for it someday...So will their wives, when they will eat anything that is cooked for them, rather than being a picky eater.

AND teach your kids to cook!

When I was in the grocery store on Wednesday, there was a woman with two kids, both in the cart, who were picking out a new veggie to try. She says she let them help with the prep. They were maybe 3 and 2 years old! Smart Mommy!

I can't help but mentioned what a great lifestyle you are instilling in your children! They will grow up eating healthy foods, and hopefully, won't ever have to diet or struggle with weight because they already know how to eat healthy, and most likely, enjoy it.
