Good Morning Everyone,

Today, friends of Donald's are coming for lunch & a visit. I don't really know them very well & am not sure what to make. Anyone have any good ideas?

I REALLY want to get back to healthy eating this week. To help, I'm going to post my day's menu either in the morning, or the evening before.

Hope everyone has a good weigh-in.

Are you able to maybe grill out??? Do something on the grill and a big salad or something. I think I am finally trying to kick this cold so I can get back going next week, this cold has really kicked my butt!! Today I need to head back to the mall to take something back, run take something defective back to Best Buy and do some housework too.

So what's everyone elses plans for the day??

Hey! That grill idea! I like it! Maybe I shall do that for my company! Dh wanted to just order out but I need to get 2 more pounds off before the 14th in order to meet my mini goal... Grilling sounds appealing.

COmpany should be here by 12:00 - we will eat and go bowling... it is supposed to be 52 degrees here today so the grilling sounds great... The more I think about it - the more I like it.

How about:

Warm Tangerine and grilled Chicken Salad:

Zest and Juice of two tangerines
2 sprigs of fresh rosemary chopped
3 garlic cloves chopped
1/4 flat leaf parsley chopped
6 tbs EVOO (EXtra Virgin Olive Oil)
1 1/2 lbs chicken cutlets
1 pint red grape tomatoes
1 fennel bulb
12 kalamata olives pitted and chopped
12 green olivies pitted and chopped
4 scallions thinly sliced
2 large white or whole wheat pitas
1/2 c parmaseam cheese grated

preheat grill

in a shallow dish combine juice of one tangerine, rosemary an 2 of garlic cloves , parsley, 2 tbs EVOO, salt and pepper. Add chicken and marinate for 5 minutes.

Place tomatoes, fennel olives, and scallions in a large bowl, add juice of tangerine and tangerine zest, salt pepper and two tbs EVOO, then stir to combine. The salt will start to draw in the juice of the tomatoes and and that will become part of the dressing.

separate two pitas into 4 round disks. combine remaining garlic 2 tbs of EVOO. Brush both sides of the pitas with garlic and EVOO and season with salt and pepper. Place on grill and flip when well marked. sprinkle with parm then remove from grill.
Grill chicken 4 minutes on each side. remove from grill let rest one minute. slice into thin strips and then add to the bowl with the tomatoes. toss and serve over pitas!

Morning!
I am not doing much today. I have a little one that is sick. He started throwing up last night around 12:00 and he hasn't stopped since. He is now starting to feel at ease, so we will see. I was up on the hour and I am going to rest today. I am going to watch some Lifetime Movies and sleep.
Oh yeah... I am on a mission to take the life of a mouse . If you read my food journals, you know that my treats are always M&Ms. I got into the drawer the other day and found that someone has not been following their plan because their were tons of M&Ms gone. You could tell that a mouse has torn one of the bags and eaten a bunch of the M&Ms. I live in town! I hate mice!!!! We have a big farm that is across the road from us and that is probably where it is coming from. My husband said last night that he saw my friend going down the hall and thought it was funny. I got so mad at him and said that is it. The mouse will be visiting the golden gates tomorrow. He has eaten my favorite treat and I am mad . I am going to have to bleach down my counters and make sure food is put away in a container until the critter has been done away with. That is my story for today. I wil continue with this tomorrow and let you if he has been caught.

Hey maybe that little mouse was just trying to help you with the diet so you wouldn't eat all the M&M's.......

I really have no plans for today. We bought a new grill and will grill out some chicken tonight. We usually grill out about 3 nights a week.....ahh the Florida lifestyle...

My stomach has finally stopped hurting and that is a big relief. Still going to see my GI dr. on Tues. in case this happens again to see what I need to do.
Start working on my new deductable

I was down yesterday but up today....hope it is the salt in the soups I've been eating. Will see tomorrow but it will probably be STS. When does this challenge end??? Anyone know???

Good morning ladies!

Melissa, I am sitting here laughing so hard my sides hurt. I have 2 cats and Faith would love to play with a mouse. Want me to send her to you for a while? She tosses her little red mouse all over the house.

We are going to church in a little while and then to lunch and then back home. DH is working on getting the new satellite and DVR hooked up. This new TV is gigantic!! He hooked up the DVD last night and we watched Star Wars III and I felt like I was in the theater. And we don't even have the surround sound hooked up yet!

Of course, it took him 4 hours yesterday to buy the TV. He had to negotiate and negotiate and make up his mind and negotiate some more and go to this store and that store. I finally gave in and let him spend more of my bonus than I had planned just so I could go home!!! Oh well, the fish tank can wait.

I had a bad food day yesterday. I ate breakfast at 10:00 and then didn't eat anything again until 7:30. But I was still the same this morning. I don't weigh until Tuesday mornings.

I HATE mice. We had 3 when we lived in Arizona. When I discovered the first one, I called my husband to tell him about it. He said, you know what we have to do, right? I said, yeah, MOVE!!! He was thinking more along the lines of getting a cat. But we got traps, and got those nasty little buggers quickly. Though I do still get paranoid about it from time to time...

Melissa - if he keeps eating those M&M's he will probably die from complications of diabetes...

Mice can be anywhere - not just farms etc. Especially not now that we have taken over most of the open spaces. Pretty much all you can do is set traps... GOod luck!
