Default Tried the veggie Quiche cups

YUMMY!!! I sort of turned up my nose to them when I read about them in the book but I thought, hey, I should at least give them a try - OMG - they are delicious!!
Has anyone tried making any varieties? Just curious because I think these are going to become a regular part of my diet mm mmm mmmm

I make breakfast ones with cheese, canadian bacon and mushrooms, and lunch ones with cheese, mushrooms, and broccoli florets.

Default me too!

I just made them for the first time the other night - I cut back the spinach a bit, added onion, garlic, and a combo of red and orange pepper , and some feta cheese along with the mozz. Plus- they freeze great! So, I think I will make some more this weekend to keep in the freezer and use on those mornings when we're running too late to actually make breakfast.

Well, leaving aside the human tragedy of eating something out of a muffin case that is not actually a muffin, I suppose they are ok. But how do you stop them sticking to the paper?

Clovey, don't use the paper cups. No one does. We just spray our muffin tins with a bit of non-stick, low-fat "oil".
I once ate half of one of those paper cups before realizing it...

I forgot to mention that I sauteed the veggies in a little bit of olive oil before adding them to the egg - really brings out the flavor. I also added just a splash of skim milk and mixed them well so they got nice and fluffy.

I love your sense of humour!

Re the eggy/spinachy thingies..... I think they got me through PhI of the plan. Very easy to zap in the microwave for a quick breakfast!
