I have seen posts here and there about people's favorite dieting foods and was thinking about how helpful they have all been to me since I begin coming to 3FC last August. I had never heard of Kashi or tasted a Chef's Max Boca Burger before coming here and now they are staples of my diet. I have hot cereal almost every day, where I used to have high fat breakfasts. I make chicken fajitas all the time but serve them over lettuce with salsa instead of having them in a tortilla with real sour cream like I used to. Putting them over a big pile of lettuce I fill up quickly and don't go back for seconds.

One of my recent favorite recipes is this

For one serving use the quantities below, or just make a bunch for a party

Shrimp (medium sized cooked peeled) 1/2 cup
black beans 1/4 cup
chopped tomato 2 medium
chopped onion 1/4
cilantro fresh chopped (or fresh basil)
garlic (squished)
Lime juice ( a tablespoon or so)
salt and pepper

It makes the most delicious salsa and it can stand on it's own without chips.

I use a nonstick skillet and spray is with a bit of olive oil
Then I add 1/2 onion sliced pretty thin
then after the onion cooks a bit (My DH hates raw onions) I add sliced chicken breasts (however many ounces I want) and some fresh garlic
When the chiciken is half cooked I add a pepper (red or green)
I spice with lime juice, salt, pepper, cumin, and fresh cilanto if I have it.

Then I serve it over a bed of romaine lettuce with about 1/2 cup of good salsa and 2 tbls of nonfat sour cream, and some chopped tomato.

If I have room for more points I will throw on a 1/2 avacado, an ounce of sharp cheddar cheese, or eat it with a tortilla -- but most of the time I am short on points by the end of the day and just have it as is above.

The points will depend on how much chicken -- but it can easily be a satisying meal that is under 5 points.

Default Fav Foods

For a quick meal I love to make burritos or quesadillas. I buy refried pintos in bulk - add boiling water & voilla! then put in a tortilla with some pam sauteed onions & peppers, salsa & leftover rice. Wrap and nuke

Black Bean & Corn Salsa
Drain cans of black beans & corn plunk in a bowl with chopped green onions & cilantro. Add cumino & canned chunky tomatoes. Put it everywhere. On potatoes, on eggs, on baked tortillas, in burrittos, in your mouth. Yum Yum. I think I'll make some tonight it sounds so good.
