I forgot how good the basic recipe was...

any good suggestions on variations on the basic recipe ?

The Muffin in a Minute.... one w the flax meal

I made it and sliced it and toasted and then added some cream cheese and lox... makes a very very filling breakfast

Default here is basic recipe for MIM

Muffin in a Minute (MIM) ~


Ingredients



1/4 cup flax meal
1/2 teaspoon baking powder
1 packet splenda packet
1 teaspoon cinnamon
1 large egg
1 teaspoon butter

Directions

Spray a coffee mug w Pam add some butter a melt in the microwave then
Put the dry ingredients in a coffee mug.

Stir.

Then add the egg Mix.

Microwave 1 minute (or more). Take out. slice, butter, enjoy. Or you might enjoy slicing and toasting it as well.

Cream cheese would go nicely, too.

The shape of this can be changed by making it in a bowl.

It can be "toasted" once it's cooked.

The cinnamon can be replaced. I use some vanilla flavoring

I'm not on South Beach, but I make a similar MIM on my plan (Dukan Diet). I usually use cinnamon and vanilla but a couple of other variations I do are using powdered ginger for a gingerbread muffin, and some unsweetened cocoa powder for chocolate.

I also want to try making a savory version with garlic, onion powder, etc. and having it as a side dish, like stuffing, although I haven't gotten around to trying that yet.

I was thinking if I can find a appropriate container I could make a ' bun like' muffin.. and split it for a sandwich.. making just ONE at a time might help me not over eat bread and this has so much fiber it is very FILLING
... like the idea of making a savory one too.. hmmmm have to think what kind of flavors might work
