Default Valentine's IP Cake - Need Opinions

Hi everyone. So I would like to make a special IP treat for me and husband for Valentine's Day. The kids will be scarfing down their chocolates and thought it would be nice to try one of the cakes I see recipes for.

Hoping people could chime in on what works best and tastes best for a chocolate cake. I have not been a fan of the pudding taste and do not know if that comes through on cakes. Any other product I should try? I need to buy stuff at Thursday weigh in and was hoping for some opinions on favourite treats out of IP stuff. Thanks.

I would use the Mug Cake recipe:
1 pkg Chocolate Drink ( replace with other drinks try with vanilla drink)
1 egg white
1 teaspoon baking powder
1 tablespoon olive oil (I use 2 tsp)
1 teaspoon splenda (or sweeten with other sweetener to taste )
Splash of vanilla
Put the drink mix in a big mug Add enough water to bring it to a slightly watery pudding consistency, just enough to be able to mix easily Add other ingredients (egg white, baking powder, olive oil, splenda, vanilla ) Mix it like crazy with a big fork till it's silky smooth Put it in the microwave for 3 minutes ON TOP OF A BIG PLATE Watch as it expands like crazy Let cool

I put mine in a bowl so it doesnt run over. I also add sugar free Da Vinci or Torani syrups over top when it comes out of the microwave to change up the flavors.

I used the chocolate crepes to make myself a birthday cake and iced it with vanilla pudding. I drizzled WF choc sauce on top for the "purty" part
It wasnt' super fantastic, but it was a treat that looked/tasted like cake

Thank you both for the ideas. I have not attempted any "cakes" from anything yet. Little worried about the mug cake as I have heard some people have difficulty with it. Can you not bake it?

I do like the idea of using the chocolate drink though as I usually buy those anyway. Don't really want to spend $28 on something I won't regularily use, and probably don't need to make chocolate cakes really often either as it feeds on my weakness. But as a special treat, then it's something to look forward too.

Are the chocolate crepes restricted? I am guessing probably. Did you bake this?

There's a recipe for making chocolate cookies and muffins from the drink mix too. I think the muffin recipe has zuccini in it. You could really kick it up with a little WF choc or caramel syrup! Oh, and there is a recipe for chocolate bark from the drink mix too! Super easy

Chocolate Bark Recipe:

IP chocolate pudding (or any pudding of your choice)
(the next 2 ingredients are not needed if you are not doing the choc pudding)
2 tbsp cocoa powder
1tbsp instant coffee

2 tsp splenda or stevia
8 oz of water (depending on consistency, could be less)

Shake, pour in aluminum pie plates or place on parchment paper on cookie sheet.
Freeze (30-45min)
Take out of freezer, break chocolate into pieces
Place in container, keep in freezer.

The chocolate cakes ARE restricted so you may not want a box of them. I can buy individual packs at my clinic. Yep- just baked it. I was actually camping so my boys baked it for me in a tinfoil pan stuck in the BBQ so no idea what temp, but I'd say 350 for 8 min works for the cookies, so a bit longer maybe for a cake? 10-12 min??

Mmm I think I want to try that chocolate bark too. Sounds really good. I did just recently try the rhubarb crumble for the first time. Boy was that rhubarb tart. I had to keep adding splenda just to get it down. Maybe stevia might be better for that? I need to source some of that out as I just felt I was using way to much splenda.

I made the rhubarb crisp and loved it. It was such a treat for me. I also made a portion for my husband with the typical crisp topping but he added ice cream as well.

Try adding WF Strawberry Syrup to the rhubarb crisp and make it a Strawberry-Rhubarb crisp.
