I'm at home today because we are under at least 12" of snow and they haven't plowed our street, and get this the heavy snow's haven't hit us yet I'm enjoying my day home w/hubby and Grace.
How was your weekend ? Mine was great, had the sisters over on Saturday and we did some muffin baking, the recipe LindaT gave me was AWESOME, it was exactly like my carrot cake but even better. I did however make the cream cheese frosting mmmmm. The cranberry orange ones were okay but dry so I'm off looking for another recipie or I'm gonna add crushed pineapple to it next time.
Sunday was great, I met some folks that I met her in 3FC's and we went out for a great Lunch, it was really a great time and the food was out of this world, now hubby wants to go there
Today will just be cleaning up a bit and finishing laundry since I didn't really have a chance to do this the past 2 days.
Leenie, your weekend sounds great! your muffins sounds yummy good - I love carrot cake, but I especially like the frosting! yum!
Can you say who you met for lunch from 3fc? I think that would be so cool to meet with some of the friends we have made here.
I have been watching the snow in New York on The Today Show - wow - that is a blizzard! It is snowing sideways. Guess yall are getting the same stuff huh leenie?
I have a terrible cold - I am not complaining - just explaining why I have not exercised since Friday. Well I did clean house on Saturday - which always counts in my book as exercise, but I didn't do a thing yesterday other then going to Sunday School and Church, and other then going to work today, I doubt I will get another thing done. Feel like an old old woman with a great big cold! *sigh* My mom just called and is cooking a pot of gumbo so I'm gonna run over there during my lunchhour and have some gumbo - yum. Maybe that will help my cold! ;-)
My oldest son started his job at the new SuperWalmart this morning and I'm hoping and praying that all goes well for him. The store doesn't open for another month, but I'm sure they have lots for them to do to get the store up and running. Lots of trucks to unload and shelves to stock!
I hope everybody takes a minute to check in today, but I guess lots are off of work today with the President's holiday.
It's in the 30's here and I have froze since getting up this morning. I've considered crawling back into the heated waterbed but then I'd get nothing accomplished.
We went to church yesterday morning which I always love. It seems to make the rest of the week go better for me. I tried to give Chris away for a week but no one would take him. I asked Pastor Dave if he loved Chris and he said yes, that he'd just hugged him. I told him then he should take Chris for a week so I could have a vacation but he told me he just loved him from afar. darn.
Nothing special going on around here. The nurse was in this morning for her monthly visit with Chris. Everything was okay. Dad slept in til 8:30 which was good for him though he hates doing that. He has now gone to the coffee shop. I swear, I think men are worse about gossiping than women!! He always comes home with some tidbit of info.
My sister called here...we missed the call but her name showed on the Caller ID. Guess she is up to something AGAIN. Looks like a restraining order will have to be gotten if she does. The last thing I need is more crap. I will get one if she calls again as I won't put up with her calling here and upsetting Dad. Geez, do people ever give up???
I bleached my hair Saturday evening and it looks pretty good if I say so myself. I got the 30 instead of 20 % peroxide this time and it really made a difference. I rolled it while wet and let it dry part of the way instead of just letting it dry normal. It gave me less frizz and looked better when I used my hot curlers yesterday morning.
What muffins are we talking about that are so good??? Linda Linda I want the recipe!!! Or did you already give it to me?
Gotta go start Dad's laundry and do some picking up. I have an attorney appointment this afternoon on Dad's stuff so need to get ready for that. Catch you all later.....
It is nice to have the extra day off after taking my course all weekend. I passed ACLS and am very glad to have it done. My kids are glad to have me back. My oldest told me to burn my notes.
I wonder if the carrot muffin recipe is on our recipe page that meg had going...I also have a pile of banannas to use up. I need a good mufffin and carrot one. I will do that tomorrow. I need to start making nutrious meals for my kids...I have been neglecting them.
When I got home yesterday I told hubby to remind me to never take a course again! It was really an event! He just laughed and said ...."Until next time"....he told me I should go and take my BSCN which has always been a goal of mine...we shall see...no time soon! I need to clean my office, get caught up on my scrapbooking, get back on track with my eating and join the gym.

Cathy I hope you are feeling better soon...sounds like this cold has been bugging you off and on since Xmas. Good luck to your son...let us know how it goes.

Gee, give on person a recipe and everyone wants it The recipe did NOT call for cream cheese icing. I made a mistake of suggesting that as an option to Leenie and that was enough to corrupt her.

I left out the raisins, since to me they look like big rat turds I added a little more apple to compensate. I did mix up a little powdered sugar and a little water and topped the muffins with a light spiderweb of this. They tasted really good and are chock full of good produce. I also made a mexican casserole. Ths hasn't been baked yet.. it's dinner tonight. This has low carb herb and garlic tortillas, medium enchilada sauce, shredded cooked chicken breast, white beans ( wanted black but was out), soy cheddar cheese, a mashed potato, garlic, cumin and chili powder. I should have added sliced zucchini, but I forgot so I'll cook this as a side dish. Lots of protein, zero sat fat ( except for miniscule amount from chicken), and looks wonderful. I just discovered soy cheese and am now a fan of it.
Had a nice weekend. Met with the pastor at my house on Saturday at 9AM. Everything went fine. I had coffee and the muffins to serve. He stayed for about an hour and 15 mins. After he left, I went off to do some shopping at the organic grocery store. I don't get there but 3-4 times a year, so it is always an adventure. I got some quinoa grain, amaranth grain, lentil pasta, quinoa pasta, tempeh, soy cheese and some other stuff. The quinoa and amaranth are very tiny grains, smaller than rice and are suppose to be quite good for you. Don't know yet how I am fixing them, but have found a few interesting recipes. Sunday I worked on church website, and watched some good movies on Lifetime. It was a day dedicated to stopping the violence against women, so lots of tough subject matter was on.. but very good. Here it is Moanday and I am at work. No holidays in the private sector in California

Cathy, drink your fluids, rest, and eat plenty of garlic and onions. I have a theory that the smell chases germs out. Hope hubby doesn't run off too from the aroma

We had snow yesterday & last night....but nothing like you all in the east. It is -4C here today....so not too cold. When it is 0C here....it feels balmy!!!! Just kidding....we are used to -30 & -40C temperatures here.
Last week wasn't a good week here.....had a hard time getting out of bed all week....so then I used the light box later than I should have....it is supposed to be used at the latest by 9 A.M.....so I was down & sad all week. On Saturday....I started to set the alarm for 8:15 in the morning....& have been since....today I do feel better.

Hey guys! Boy I think I must be the bad one of the bunch. After I read your posts I feel kinda bad about all of the things that hubby and I do. (feel free to read the journal) We ended up having such a good time Saturday night we didn't get to bed until 5 in the morning.

Liz congratulations on passing your classes. When I was going to school and working full time I was so stressed, I really give you tons of credit for juggling all of these and kids on top !

LEENS would love to send you some warm weather. I saw all that snow on satellite tv and thought of you guys. We very rarely get snow here and once evry 20 - 30 yrs like that. We get excited about a few snowflakes because we never see it!

I'm feeling pretty ok at the moment. I remember to take my pills most days (that helps!!) and have met up with some wonderful people online that have really helped. It's so nice to have people like you guys around.
Leenie.....You need the light box to have 10,000 lux....that is a measurement of brightness......if I remember right. It cost $283 Canadian....I new somone who looked online....these were US places....he noticed that they went up to $500 US or more...so it depends. The have to have a filter on them....so you don't get eye damage.
