Default New to the lowcarbing

Hi everyone, I am new to this low carbing....well not so new...I have started the atkins diet back on Dec 2, 2002...and so far down 15.5 lbs......I feel pretty good health wise from it....and have noticed a drastic change in my clothes!!!

I suffer from depression so thats a bonus that I am not filling myself with JUNK FOOD to try to rid the depression.....but I am starting new meds this week so hopefully it will ease up some!!! I have been in out of depression now for years but right now has hit another bottom!!

I live in Western Mass and have 2 boys. I am married and a stay at home mom!!!

I am still pretty new to this and so I am looking for a lot of new food ideas.....as to like baking, cooking etc......I just dont want to get bored with the same old things and then lose control again!!!

one quick word of advice: DON'T BAKE!!! trust me, the kids can surive on store bought. why torture yourself???

Well, I don't think we've met yet--I am Misty-mis-whatever--And you are soooo right! I am only on Day 5 of the Atkins--and I'm gettin' pretty bored already! I did get a couple of lo-carb books at the library--unfortunately what they think is lo-carb--30-40 grams per serving--and what Dr. Atkins thinks is low-carb is totally off!!
I am a mom to two girls--one is 4(her name is Tori but I refer to her as "Queenie" on the board), and the other is 8(going on 20!!). I gained all this weight while preg.--and although I gained weight the first time--this time it won't budge--so I've always known that I am addicted to carbs --this is the only thing I haven't tried.

The induction has made me feel kinda of pukey--I am only on day 5 though and I am feeling better today.

Looking forward to getting to know you better!!

Jiffy.....I was hoping to find some goodies to bake that were carb friendly for me.....LOL.....I do bake for the kids....and I never touched the cookies and brownies and such that I baked for xmas.....so I think I did pretty well!!!....

Missy.....I felt like poop the first week....it'll go away....if you would like.....you could send me a private message with your email address and I can share with you some of the new things we have tried and liked and maybe you will too!!!...I keep toying around with things and learning how to spice them up a bit!!!

Dottie ... one of the things that was new to us that I tried last night turned out pretty yummy.....I found them on a low carb website I found.....they were flourless crepes with ricotta cheese filling.

Flourless Crepes: 1 large egg, 1Tbsp cream, 1 Tbsp oil, 1 tsp vanilla and 1 packet of splenda. Mix well and pour into a heated skillet sprayed with pam cooking spray. Cook until top looks dry then flip and cook just a couple of minutes to slightly brown the other side.

Filling: 1/4 cup ricotta cheese, 1/2 tsp vanilla and 1 packet of splenda. Mix well and then spread on the crepe and then roll the crepe.

Depending on your ricotta cheese.....but my version came out to about 7 carbs for the crepe. They were really a tasty treat and might be really good with a low carb maple syrup!!!

Mexican Salad:
I take a cooked and cooled chicken breast and dice it up. Then I put it on top of a bed of lettuce. I use a few of the grape tomatoes and then a spoonful of sour cream and then sprinkle some shredded cheddar cheese on top.....then I drizzle taco sauce over it. It is so good...dont recall extact carbs but I would guess......4 carbs....depends on what you use!!!

I forgot all about the downloadable recipe book it prints out at about 120 pages or so but has many low carb bakable foods. let me see what i can find to get the web site back. (my puter dies and lost the entire book)

You can also go to Atkins Nutritionals website and get great recipes there. I have found some great ones for me and my family and they also taste great.
