Oh, I'm sorry. I blew out pretty much every tendon/ligament/whatever in my ankle in Nov 09, so I feel your pain. Literally. My ankle just twinged in sympathy.
Honestly, moving around was so difficult for me that I basically went from bed to work to couch to bed for a few months. I just accepted the weight gain and worked to correct it once I was cleared for exercise. Once I was a little more oriented to my condition, and not just working/sleeping/trying to wash my hair, I tried to track my points.
I didn't do a great job of it, to be honest. My husband was working 24/7, and so was I, and he had to take care of EVERYTHING, an we weren't always mindful of what we ate. But we tried. If I had been more careful, I'd have gained less than I did. Given that I did SOMETHING, though, my gain wasn't insurmountable.
Eat foods that give you energy -- veggies, whole grains, fresh proteins.
Do any physical therapy exercises you can. I don't know if knees and ankles are the same, but doing mine every day saved my mobility and helped me heal faster.
The good news is that I healed as much as anyone can heal from that kind of thing, got 100 percent of my mobility back, and just have to wear a stretchy brace when I work out (more for pain management than anything else).
