Today is my fifth day and I am having very hard time as I got my periods this morning.
Also, as far as select veggies, since I cannot use tomatoes and colored peppers it really limits what I can use on my salads ( which is what I have been doing for lunch) for color. Former nutritionist used to tell me "more color the better" but obviously not the case here...

The first week can be very hard, especially when you're PMSing. It gets easier. Actually, you can have up to 4 cups of restricted vegetables per week. So if you stick to a few bits of tomato and red pepper (for example) in your salad, you should be fine. You should join everyone else on the IP weekly chat.

That is what I do, too. I just add a bit of tomato to every salad! More variety!

Welcome!!! I agree... the first week is very tough and it DOES get easier! Hang in there and stay focused on your goal. There are many great ideas on this website from other members on how to add variety to your meals, especially vegetables. You can make chips from Kale, try rhubarb with some splenda and Walden Farms Strawberry spread. I like to roast my veggies in the oven with some olive oil and mrs dash. So good. There are so many opitons that I never considered before and they are tasty. This website is a lifesaver and keeps me going. You can find informaion on just about every thing you may have questions about. I just started my 4th week and I still have moments where I crave carbs but I know if I stray, I only delay getting to my goal and then learning how to maintain. You can do this!!!
