I am a gluten free vegan. I have been gluten free for 4 years, vegetarian for 14 years and vegan for 2 months. I agree with Carly Smoker, I would not remove gluten unless you know that is the cause of your health problems. It does suck. Once you remove the gluten from your diet, it could be harder for doctors to detect if gluten is a real problem for you becuase it is not in your system.
With that being said, there are many low calorie vegan and naturally gluten free foods. I will say, taking gluten out of you diet will take alot of familiar foods away. You need to be comfortable with cooking. It takes alot of preperation and planning. There may not always be options out in the world to eat so my suggestion is to always have snacks with you to prevent temptation.
It all depends on what you like to eat. I eat alot of beans,seeds, potatoes, brown rice, brown rice pasta and lots of veggies. There is a vegan gluten free cookbook available on amazon.com. The other resources mentioned by others are great also. I would do some research first before trying a gluten free lifestyle. Gluten hides in many things. Good luck.
