Default Fat Smashin Pumpkin Muffins Phase 1 & Up

I adjusted a recipe I had that was for sweet potatoe muffins (which you can also use) but were loaded with all the wrong things. I converted it into a Fat Smash allowed recipe for Phase 1 and up. Even though it contains brown sugar, mixed with Splenda it creates a similar "blend" as the Splenda Brown Sugar Blend that is so expensive. Even with the olive oil & margerine, per serving with all of the adjustments they are still within our allotted daily amounts. Also, they are pretty darn good if I must say so myself! Hope you enjoy them too!

Fat Smashin Pumpkin Muffins

INGREDIENTS:

Batter Ingredients-

100% Liquid Egg Whites-2/3 Cup
Splenda -12 tsp (6 packets)
Brown Sugar- 1/2 cup, packed
Libby Canned Pumpkin-15 oz can (1 3/4 cups)
Olive Oil- 4 tbsp
1 medium banana, very ripe, mashed well
Water-4 fl oz

Oat Flour-1 3/4 Cups (or grind about 2 1/2 cups of oats to make flour for this and later for topping)
Baking soda-1 tsp
Baking Powder- 1/2 tsp
Iodized Salt-1/4 tsp.
Nutmeg, ground-1/2 tsp
Cinnamon, ground, 1 tsp

Topping Ingredients-

Oats, dry 1/2 cup
Brown Sugar-1/4 cup, packed
Splenda-6 tsp (3 packets)
Oat Flour-1/4 cup
Cinnamon,ground-1/2 tsp
Margerine-2 Tbsp Softened

Preheat Oven to 350 degrees.
Prepare mini muffin pans by spraying with an olive oil spray or use mini paper cups. If using the foil type of mini paper cups, spray those as well. I like using these for a time saver as these will stand up by themselves and can be put side by side on a cookie sheet to make more at one time.


DIRECTIONS:

In large bowl, whisk together, liquid eggs whites, Splenda, and brown sugar. Add can of pumpkin, olive oil, mashed banana, and water, continue whisking. Mix well until all combined. Stir together, in separate bowl rest of dry ingredients, 1 3/4 cups of oat flour, baking soda, baking powder, salt, and spices. Slowly add the dry ingredients into wet, mixing with each addition until all of the dry mixture is incorporated. If batter seems too thick add a little more water, too thin, add a little more oat flour.

Make the topping by combining softened margarine (NOT melted), with the oats, brown sugar, Splenda, oat flour, and cinnamon. Use a fork to combine dry ingredients into the margerine until it gets crumbly.

Use a tablespoon or smaller ice cream scooper to fill the tins/cups about 3/4 full with batter. When done, sprinkle some topping on each.

Put in preheated oven and bake 12-14 minutes until tooth pick/knife comes out clean. Don't over bake.

Cool on racks. These are best kept in a container covered with wax paper. Although within a day or so (because of the moisture content) the topping will get softened, so best to eat them when they are fresh! Yum!

Serving size is 2 mini muffins. Recipe makes approximately 40 mini muffins. If making regular sized muffins nutritional info would be multiplied by about 1 1/2.

These sound so good!!! I'm currently in phase one and I'm kinda stuck with the same foods and getting bored with it!! These sound so good, but I'm afraid of eating them because they will mess up what I have going. Would you say that a serving size is good for one day??? Just wondering. Thanks for the help!!

Hi Capelover11,

Thank you for replying to my recipe and I'm sorry for the delay. I am part of a couple different nutrition sites and I have been away from this one for almost a week.

Definitely the key to staying faithful on Phase 1 of the Fat Smash Diet is to be creative with the ingredients allowed. Although no desserts (or sweets) are technically allowed on Phase 1, I have felt if you can take the allowed ingredients and make a dessert or sweet without going over your daily intake then why not?

This is why I created a few different "sweets" with what we can have (I'm a sweetaholic!). If you want to stay VERY strict then I would say you may not want to make these. However, they ARE made with approved ingredients and if eaten as an indulgence, in moderation, the muffins as a whole food stay within our guidlines as well.

They are low calorie, low fat, very low sugar, and the worse thing is the carbs. If you didn't have your total allowance of oatmeal or brown rice for the day then you saved those carbs for the muffins! Here is a link to my actual recipe on another website that gives you not only the full directions but the all important nutritional facts. If you click on the highlighted name of the recipe on bottom of the first nutritional label it will give you even more details and I suggest that. Thank you for posting your reply. I also find myself to be quite a sweetaholic too!!! Me and my roommate are doing this together and I must say we are getting great results! I ended up making them just to try them out and I must say they are wonderful! Even my other roommates that aren't on a diet loved them!! I agree that it helps me get that sweet crazing satisfied!!!

Dear Capelover11,

I'm so glad that you made them and liked them! I'm also glad that your roommates enjoyed them too! I knew I had a hit when my husband kept stealing them to take to work!

Did you get to go on my other webpage to look at the nutritional facts? Are you tracking your food intake daily? That's another important thing about this diet....or any diet. If you see what's going in every day then it's easier to know when you have to adjust things. I track mine on the same website my recipes are on and I just jumped back into my old team on there too.

There is also a webpage on here for those that are on the Fat Smash Diet. It's just a few of us but at least a couple of us come and post on a regular basis and can answer questions. I'll add the link on here when I'm done. When did you start Phase 1 and how are you doing sticking to the plan? If you are done with the first phase, how much weight did you lose?

I started January 11th and tomorrow is my last day of Phase 1. Me and my roommate decided to weigh ourselves once a week and yesterday was our weigh in, we both lost 10 pounds! It was so great to see that on the scale and it helps keep me motivate when I don't want to get up at 6:30 in the morning to go walking.

This recipe sounds awesome BUT in Phase 1, you are not allowed sugar, oils, salt or anything like that...so I don't see how this recipe could be considered for that phase. However, I'm going to print it out and see if I can't modify it (at least for Phase 2)!
Has anyone else tried this?
