Yes, we know what you mean. Carbs are an addiction to many of us.
And it is hard to start taking carbs out of our diet. Very hard.
But Atkins is very strict. Why don't you try another lc diet? CAlP (The Carbohydrate Addicts LifeStyle by Drs. Heller) is fairly easy, for some. You don't have to count carb grams, but only have to measure carbs by general size. In other words, if the carbs are the same size as the protein at the one meal where carbs are allowed, it's fine. You don't even have to weigh them or anything. Just eyeball it and see if the carb is about the same size as the protein. BUT, you still need to read the book. There are other rules you have to follow. Still, it is pretty easy. Some people feel it has too much freedom about the carbs, and like other diets because of the restrictions.
But you can check the book out of a library and see if it might be the diet for you. Or, check out a few of the lc books and see if another diet might be easy for you. Atkins is about the most strict about carbs during induction. Really hard to start. But the reward is quick - you quit carb cravings in just a few days.
