Default Got bell peppers--any good vegan recipes?

I bought a green, yellow, orange and red pepper at a farmer's market because they were only 25 cents each. Such a deal! Now I need to figure out what to do with them. Any ideas?

Yum! I'm always partial to whole grain pasta with red pepper sauce (like this recipe for penne with red pepper sauce, almonds and lots of broccoli):

One of my favorites is a salad of rice (I use a mix of brown basmati and wild) and roasted bell peppers (a mix of colors). I prepare these two items first (I don't like the jarred roasted bell peppers you buy). Apart from cooking the rice (which you could have on hand already anyway), it comes together really fast. Good cold too.

Use olive oil to saute some garlic, add some pine nuts for a minute. Then add the roasted peppers plus (good) black and green olives for a couple minutes. Then add the rice and some shredded basil and S&P for a few minutes.

Really tasty. Really pretty too, with two colors in the rice, two colors of bell peppers, two colors of olives.

I should give credit - this is from The Mediterranean Vegan Kitchen, by Donna Klein: "Arborio Rice with Roasted Peppers, Basil, Pine Nuts, and Olives." I never made it with the arborio rice. I luuurrrrve my brown rice.

I'm making fajitas this week with peppers, onions, and seitan sauteed in olive oil (seasoning with chili powder and dry garlic that I got at the farmer's market.) I'm serving it with whole wheat tortillas and guacamole. I'm not vegan, but I'm fairly certain that this meal is (I'm not 100% sure my tortillas are vegan, but I think they are.)
