Argghh! Quick, recipe help!!!!! (Sbd cola chicken)
I know this thread would probably be more suited to the recipe section but I figured I'd get a much quicker reply out here in the main SBD forum. (I apologize in advance.)
I decided I would try the SBD cola chicken recipe tonight, although I'm not sure how well I'll like it. But, I happen to have the ingredients, sorta.
In the cola chicken thread, someone posts a recipe on how to make SBD friendly ketchup, which is:

48 ounces tomato juice
1/2 cup vinegar
2 tablespoons sugar substitute
1 teaspoon dry chopped onion
1 teaspoon dry chopped garlic
1 teaspoon dry chopped green pepper
Directions:
Boil all ingredients together until thick and reduced to about half the amount of liquid. Store in refrigerator.
Okay, I used regular black pepper instead of the green pepper but that's not what I'm worried about. I didn't have any tomato juice so I opened a 6 oz can of tomato paste (the ingredients are: tomatoes) and added water and mixed with whisk until it formed around 40 oz or so, since the ketchup recipe calls for 48 ounces of tomato juice.
You need to boil it down for sure. The catsup recipe is 56 oz of liquid that will boil down to 28 oz. It probably could use another tin of tomato paste as well.
Are you saying you used 1 teaspoon of black pepper instead of a teaspoon of green pepper? I thought that the "green pepper" in this recipe was bell pepper? Would black pepper substitute for that? It seems like a lot of pepper to me. But then again, I'm easily confused...LOL
Belle Mer, I'm not sure if it substitutes for it but I figured it was worth a try. It might be too much black pepper as you said. I didn't have any green pepper. Hopefully when I add the diet cola during cooking, it will temper down the pepperiness of the pepper. I will post sometime about the results.
I hope you like it hot, Melanie! That's a lot of black pepper for that recipe. It just may be good, though. Black pepper doesn't make a good substitution for a green pepper, since the taste isn't similar. Make sure you cook the sauce down, or you'll have way too much watery sauce. I hope it turns out ok for you. Made with the regular ingredients, it's one of my favorite recipes.
I use dried bell pepper alot, and it's nice to keep on hand, because bell peppers can go bad quickly, and sometimes they're kind of expensive. Also, we found out that my husband can eat dried bell pepper, but not fresh bell pepper. There must be an enzyme or something that gets destroyed in the dehydration process.
A heaping tsp of dried bell pepper is probably equiavalent to half of a fresh bell pepper. If you don't have bell pepper, paprika might be a better substitution than black pepper.
Also, since the point of cooking down the juice is to make it thick like tomato sauce or paste (which sometimes contains sugars), if you're going to start with tomato sauce or paste, I don't think you would have to start with the same amount of liquid as the original sauce. Using tomato paste and say a little more than half the water would give you a head start on the cooking down process.
Hey you guys, that stuff was REALLY good!!!! I was skeptical at first I must admit, I mean ketchup and diet cola? But it was delicious. BF loved it so I waited till afterwards to tell him what was in it. He was pretty shocked.
The sauce turned out really good, but yes hot and peppery! I didn't mind it though, it was great. Next time I'd probably use more like 1/2 teaspoon. I don't like things too hot but I can stand a hot dish once in awhile. This wasn't too hot but it may be for people who like their stuff a bit milder. To me, it turned out great.
I'll have to find the dried bell peppers at the store, I've never seen it before. It sounds good.
Oh yeah, I thought I had another can of tomato paste but I didn't, and it still turned out great. Also I used powdered onion rather than chopped, and I used two tablespoons of Brown Sugar Twin since I was out of splenda. I think the brown fake sugar sort of lent more to the whole 'barbecue style' sauce thing. Also, I added some Colgin's Liquid smoke (hickory flavor) in while cooking. IT WAS SO DELICIOUS.
