Default beets?

I just got fresh ones from the our farmer's market.
I washed, peeled, and sliced them. I've eaten fresh beets before, but this was my first time prepping them myself. I also threw a few slices in with some veggies I was steaming at the time. Any body else eat them fresh, or am I a big honkin' weirdo?

You're a weirdo. LOL! Just teasing.

I've never developed a taste for them but DH loves them.

I actually just tried them and did not like it. I wonder why the fresh ones I eat at my school's cafeteria are better? (I'm a teacher in a primary school) What a waste of 80 cents, lol!

Did you cook them first? I've never heard of eating them raw. I scrub them then roast them in the oven. Then I slip off the skin before serving or adding to a dish. I also love pickled beets

I'll try roasting them tomorrow. I'm a little yucked out right now, ha ha!
The raw ones at my school are great. I'm not sure how I messed up making raw beets, but I'm sure it takes talent to screw them up!

Your school cafeteria has raw beets?

I made a great beet risotto once...it was bright pink but oh so tasty.

yup. raw beet sticks and jicam sticks too. We're a pretty healthy school district. You can even request a packet that has all the food served and its nutritional info. Very handy when calculating points

Raw beets with lemon juice and olive oil... a few sunflower seeds sprinkled on top --such a tasty salad!
