Default Cooking for two and WLS!!!

I hate it. I'm of the mind that you can't throw anything away, mostly food, and I'm sick of my refrigerator spewing things at me when I open the door. I'm always cutting down recipes as far as possible. Last night I took one 1/2 chicken breast and pounded it down cut it in two, browned it with salt and pepper and Italian seasoning, put that in a casserole with the Roasted Eggplant and Pepper Sauce from OH and some Italian cheese mix on top; took the rest of the roasted veggies and made a low-carb, low-fat alfredo sauce casserole. There was still about one meal left of the darn stuff. I hate leftovers. I palm stuff off on my children, the mailman, UPS guy, etc. People are starting to run when they see me. I got this crazy mindset that I need to cook meat, veggies and a starch for each and every meal and my DH is getting fat trying to eat all the leftovers and extra stuff. I've got to get my self in hand and seriously think about how I'm going to do this the rest of my life. I have little containers everywhere and why do I buy low-carb snacks?!?! I never have room to eat them and my grandchildren won't. I mental about food!! There I've said it!! Now on to the healing! I wish!! I swear I'm sending my DH to the grocery with an "Only's" list so I can't buy stuff. I'm pathetic.

not pathetic. passionate about food. i have cabinets and freezers full of stuff that i can no longer have. i have a four year old so i have to have chips, and mac and cheese and stuff like that for her lunches for school. right now i am concetrating on protein so i havent had a vegetable in weeks except for some onions cut up in stuff but i still buy lettuce every week cause i use to love salads. we are just use to it i guess. my dh needs to go to the store for me too.

OK Ladies, Get rid of the foods that you shouldn't/don't eat. Isn't there a food pantry somewhere near you where you can donate it and let someone who can eat it and can't afford it benefit? That is what I did, plus about 4-5 times a year I go shopping for the local food pantry. Many local food pantries also accept frozen meat. I spend as much on those items as I do on the family's groceries. Weigh/Measure your food before cooking to allow for reduction to what you & hubby can eat at one meal. Good Luck!

I still have not told my mom of my plans for lap band in May, but I showed her an information packet on it. Her only response was, "If you only can eat 3 oz of meat at a sitting, what's the point of cooking?"

I have a 2 year old son so when it comes to portions I kinda got off easy. I just take a normal portion and split it in half for my son and I. I don't know what I am going to do when he gets older and can out eat me.

Children do not need chips and other foods that made us overweight. They need to be taught to eat good foods and a well balanced diet. Chips should be an occasional treat. I'm sure no parents wants their child to suffer from being overweight at any point in their life, but that's how too many are taught to eat.

What is hard for me is still cooking BUT not tasting...this is very hard for me.

I cook for seven and always have to make decent amount of everything. I find that we do have more leftovers since I am not eating the same things that they do. I'm still on liquids but tomorrow I move to semi-solids.

I also find that I love to cook even more since my surgery. I don't know what that's all about....
