Default Super Bowl Party Menus

Ok, some of you may know my history with the NY Giants. I love them.
I've had the opportunity strictly by chance to meet several of them. Amani, Jeremy, Tiki (when he was there) and my fav, Michael Strahan. (got kissed by him) :woo hoo:
So, We're gonna have special foods next week.

We're doing South Beach

Of course we're having a veggie tray.
I think I'm gonna make spicy low carb chicken fingers
Maybe little low fat home made meatballs in a low carb sauce. Gotta find one
I have to be careful how much fruit we have, but I'd
really like the recipe to the zinger someone made the other day.
I actually think those little finger foods and a nice big salad would do us.
We're really trying to change our relationship with food. It's hard, but we
can do it.

I welcome all menu ideas as I like to experiment with making things low carb.

Shrimp is probably too expensive, but yummy!

I like cheese (no crackers), but not sure if that SB friendly.

Some soft cheeses are great on the veggies instead of carb dip.

Not sure if any of that helped.

Actually, cheese is fine. I've been buying low fat cheese.
And I saw a pound of shrimp last night at Walmart for $6
for a one pound bag. Frozen, raw, deveined. What a brilliant
idea!!! It would be our treat!

What about deviled eggs? Especially if you use fat free or low fat mayo.

A couple years ago I made deviled eggs with FF mayo for a SuperBowl party I went to. I didn't mention that I had done this and, let me tell ya, the guys wolfed those things down! Had I mentioned the FF mayo probably no one would have touched them!

Default Healthy Low Cal/ Low Carb Blue Cheese Dip

8 oz no fat cottage cheese
3 T crumbled blue cheese
pepper
garlic powder

Blend cottage cheese in blender until smooth (add 1T milk or buttermilk if blender needs more liquid)

Add 2T blue cheese to blender

Add pepper and garlic powder to taste.

Pour dip into bowl and add 1T blue cheese for texture.

Serve with veggies. I slice chicken breasts and broil them and then smother them with hot sauce. The blue cheese dip goes great with this healthy alternative to chicken wings.

You can make all the creamy dips/dressings using blended cottage cheese as the base. Carbs and calories are low.

For the meatballs, you might try a mustard based sauce? I'm not sure if dijonaise is low or carb-free, but the regular mustard should be..

You could also maybe do a spinach dip of sorts with a fat-free or low-fat base? (I LOVE spinach or spinach/artichoke dip!)

Darn, now I want to have a Superbowl party and DH and I don't even watch football!

I see you're in Philly....oops, you don't watch football.
Man, I love love love the Giants.
We're not big on spinach dip, but I'll give it a try. It'll be fun to
have different low cal, low carb dips for veggies.
