Easy and Delicious Veggie Soup P1
I know there are plenty of veggie soup recipes on here but this is one i threw together and it's so easy...and yummy...especially the day after.
1-2 tblsp olive oil
1 box swanson organic veggie broth (or similar)
2 cans diced tomatos
1 small can tomato sauce (optional...It thickens the sauce a bit)
2 med size zucchini sliced and chopped thick
1 med onion diced
2 cloves crushed garlic
1 can white kidney beans (rinsed and drained)
mushrooms...as much as u like...or none at all
(other veggies of your choice)
In dutch oven saute oil, garlic, onion and zucchini,mushrooms until tender but still crisp.
Add veggie stock and 2 cans tomatos boil for 10 minutes.
Add white kidney beans and tomato sauce, boil for another 10 minutes.
