Default Cheese & Apple-Stuffed Chicken

6 or 8 oz boneless skinless chicken breast (size according to plan)
1 small apple, divided
1 oz (28g) reduced-fat mozzarella or cheddar cheese, shredded
5 green onions, sliced
1/4c low sodium chicken broth
1 tsp cornstarch
1 tsp water

With meat mallet pound chicken to 1/4-inch thickness
Chop one half of the apple and set aside. Slice the other half.
Top chicken with chopped apple and cheese.
Roll-up chicken, folding in sides. Secure with toothpicks or string.
Arrange apple slices and green onions in a baking dish. Top with chicken.
Mix 1 tsp cold water and cornstarch, pour over rolled chicken breast and sliced apple.
Bake at 350 F for 20 minutes or until chicken is cooked through.


Note: My DD just used water instead of chicken broth. It doesn't say it in the recipe but add the broth to the water and cornstarch mix.

Serving size: 1 rolled chicken breast and sliced apples
Exchanges: 1Protein, 1 Vegetable, 1 Fruit, 1/2 Dairy
