Hi PIC's!!!
Well....the taco casserole was a big hit!!! no leftovers for you Curly!!

I will post the recipie though, as it was really easy and really good!! I served mine on a bed of lettuce but the boys just ate it like it was.

I timed it right this morning.....up early enough to make stovetop oatmeal (yum yum) and the whisk the boys away to their tae kwon do class, and then it was my turn; they played in the daycare room while I did my bodysculpting class. Afterwards a spin in the grocery store and home by 12:30Pm....WHERE DID THE MORNING GO?
I have to tell you that I (finally) have my renewed motivation back. Its because of my PIC's and dh have stood by me through it all. Last night dh commented on an outfit I was wearing, and then went on for about 5 minutes on how I have ......grown as a person, inspired him to workout, my committment to excercise, the better choices of food that I'm buying, how healthier I am and the family.....etc etc...you get the idea!! well, at the grocery store this morning, I walked the walk and talked the talk....I stocked up (and its been awhile) on so many better foods. The last month has been a little slide for me but NO MORE!!! SO THANKYOU PIC'S!!!
Here it is.....Cliff's taco casserole by JoAnna Lund(serves 4, 4 pts each)
1 pound of ground turkey or beef
2 tsp taco seasonings
1 Cup Hunts tomato sauce
8 oz Can of kidney beans, rinsed( I often substitute ff refried beans)
1.5 Cups chopped fresh tomatoes
1.5 Cups coarsely broken Dorito's WOW nacho chips (I substitute 2 flour tortillias, cut up into 1" squares)
3/4 C ff sour cream
1/2 C chopped onion
1/2 C reduced fat shredded cheddar cheese
Preheat oven to 350F. Spray a 8x8 inch pan with pam. In a large skillet, brown the beef and onion. Drain the fat. Add tomato sauce, chopped tomatoes, taco seasoning, cut up tortilla's and beans. Stir around abit until heated through. Spread half of skillet stuff on bottom of pan. Spread sour cream over base and layer all of cheese. Top with remaining skillet stuff and bake for 30 minutes.
