  • Thank you so much! Last time I did a mix of lamb and beef too and it was delicious. I made 15lbs and froze in dinner portions with the sauce. It's been nice to have some in the freezer for sure.

  • As promised, here is my recipe for Cauliflower Polenta with Sauteed Peppers. This is my family's absolute favorite, IP or not! Hope you like it.

    I overheard my DH tell someone that he was successful on IP (lost 185#) because of my cooking. What a great compliment, even if it wasn't to my face :-)
  • Thanks for all the great recipes! I'm definitely going to make the cauli polenta with peppers tonight. I have a bunch of red peppers that I roasted the other day, so I might just throw those in instead of sautéed.

    They will work great too. Just remember to taste as you go and add salt and pepper with each step so that it all gets flavored.

    Debra, you've inspired me to cook outside of chicken breasts!! I love your blog and your recipes are so clear and easy to understand. I am an ok cook but like step-by-step instructions. Just wanted to say thank you for sharing your wonderful recipes! If you have an idea for a salad dressing, I'd love to try it!

  • Ahh, I've been roasting all my vegetables (zucchini, okra, turnips, rutabaga, asparagus, cauliflower, cabbage, etc.) and never thought to try green beans.

    Thanks for the idea, I'll be trying it tonight!

    P1 is going well--I have to say that life on phase 1 is actually easier than maintenance. I have a harder time making good decisions for myself when there's no absolute, it seems. I am definitely a work in progress!
  • I make the same thing, but I put all the veggies, including the peppers and garlic with the cauliflower on the roasting pan. less to clean. lol
  • New recipe today: Marinated Cauliflower Salad. So tasty. Enjoy!
