  • Last night was a fried egg and fried chestnut mushrooms with a slice o' toast. Then a snack-size muller-rice, a banana and an oaty biscuit and a few choccy raisins.... Someone was hungry!

    Not sure about tonight - perhaps something with sweet potatoes. Maybe sweet potato fries with some fish...
  • Tonight is another RC delight!! We are having Spicy king prawns with lemon and coriander cous cous and roasted peppers GOD I am STARVING!!!!
  • Tonight I'm making myself a sort of vegetable toad in the hole using mushrooms and red pepper instead of sausages - I'm having it with a butterbean, celeriac and sweet potato mash, steamed broccoli & cauliflower and gravy. I've not made the vegetable toad in the hole before so it should be.... interesting!
  • Cool, are you having gravy with it? you could use quorn sausage they are lovely!
  • Yes, I'm having gravy. I did think about quorn sausages which I quite like - but I try to avoid what my DH calls 'pretend meat' as much as possible - he still thinks I'm being a bit faddy about not eating meat during the week so its just easier not to give him any reason to think I'm getting bored with it.

    I'm looking forward to my weekend food - I eat freerange and/or organic fish, chicken or meat at the weekends. Interesting how not eating it during the week makes me appreciate it more at the weekends.
  • Are you still having the yorkshire pudding type stuff with it? So battered veg? I suppose those really big mushrooms would be nice in it
  • I know what you mean about 'pretend meat' I like it though and it is much lower in fat and calories than the real thing, we have some friends coming to dinner on Saturday and I am doing a thai green curry with chicken and a thai red one with quorn pieces for Katie cos she is veggie, I am gonna see if her hubby can tell which is real meat cos he is a confirmed carnivore!!
  • I never eat pretend meat. If I'm going to eat that I feel like I may as well eat the proper stuff.

    I'm having a leek and fennel risotto tonight from the Abel & Cole website recipe section. Fingers crossed it will turn out nice.
  • That all depends on your reasons for not eating it I spose, my friend Katie doesnt eat it for ethical reasons so the meat free stuff helps her to be a caring soul and not eat the animals she loves but still have a tasty tea!! (I know veggie stuff is lovely too!) I was veggie on the same grounds for 18 months but i am afraid I missed the real thing, I am still an animal lover but I know at the ripe old age of 37 I will not change the world (my idealistic 18 year old thoughts) and so I am ashamed to admit I do partake of the flesh!!!!!
  • Well for dinner tonight im having a Tesco healthy living chicken kiev with new potatoes, peas and runner beans
  • Mine tonight will be a chicken breast in some sort of low fat marinade with whatever veggies the veggie man brings lol!
  • I've got fennel and leek risotto with a carrot, parsnip and mixed leaf salad. I had some of the salad for lunch with a portion of broccoli and garlic soup and it's pretty nice.

    I've also got a slice of carrot cake because it's running club night
  • I'm having vegetable stir fry with lots of ginger and soy beans (that's presuming the Tesco delivery van turns up..)
  • Stuffed mushrooms yum yum.
