
I made a great, cheap noodle soup today. I was actually looking for whole wheat noodles and a vegetarian chicken bouillon to use but I live in a very small town and couldn't get either so I opted for ramen noodle soup packages. I don't usually use ramen noodles because of the sodium and fat in the noodles but I wanted soup for lunch and I wanted my "Almost Chicken Noodle Soup." So when I got home I soaked the noodles in hot water to get rid of some of the fat when drained. I sauteed onion and celery together added water and the 2 seasoning packs from 2 packages of noodles. Then I added 3 medium grated carrots. I boiled this altogether until the vegetables were cooked. The I added 2 beaten eggs (these are the almost chickens) a couple of handfuls of chopped arugula and the soaked noodles. Yum, yum. It was very tasty if not as nutritious as the whole wheat noodle version.

I did awful during the holidays and now have to lose that weight all over again. I have to write everything down or I'm lost.
