  • Today for lunch I had:

    * A Weight Watchers bagel, which I warmed in the microwave for about 10 seconds, then I sprayed with some "I Can't Believe It's Not Butter." Mmmm.

    *A salad with croutons (gasp! I know, but they're only 35 calories a serving) and 2 tablespoons of dressing

    *A diet vanilla Pepsi
  • I keep a pack of fat free bologna and a loaf of whole wheat oatnut bread at work and make a bologna sandwich with mustard every day. I usually eat a nectarine soon after. The easy part is knowing I will never forget my lunch!
    I always eat a yogurt for breakfast and my variety is with my dinner.
  • Tuna salad prepared with low-fat sour cream and mustard.
    Lettuce and cucumber salad dressed with dried Italian herbs and oilive oil
  • I just had lemon pepper tilapia, cottage cheese and a big old garden tomato sprinkled with a tiny bit of feta cheese, fresh basil and balsamic vinegar. 32 grams of protein too!
  • Ma po tofu with broccoli (spicy sauce with steamed broccoli and tofu).
  • Today I'm making a tuna melt (A Western Alternative Bagel w/ a small can of light tuna, toasted in the toaster oven with 1/4 cup of shredded light cheddar cheese).
  • I usually eat my lunch at work anywhere between 1am-2am (night shifts). I usually have a cup of romaine lettuce, croutons 2tbls, caesar dressing 1 tbls, and sometimes add some Hillshire Farm Oven roasted Turkey, and a sugar-free jello pudding, water and Enviga...I have this at least 3 times a week,,,,its my fave only about 300-some calories. Not bad for lunch.

    Sometimes I just eat a luna bar or other energy-type bar if I'm short on time. But on a day when I'm prepared and have time for a nice break, I like to bring a big mixed-greens salad, with a square of baked tofu, veggies, lf cheese, maybe a little dried fruit, and lf dressing. Very filling!
  • Today it is homemade chicken minestrone...mmm...works out about 200 calories per serve.

    I've been on a bit of a salad kick as well with rocket, baby spinach, pickled onions, sundried tomatoes, carrot and a protein source like turkey breast, ham, kangaroo, fish, pork etc.
  • Today's lunch was:

    * 3 oz grilled chicken breast
    * 2 cups of raw veggies
    * 1 bag of Baked Doritos (individual sized--not family sized!)
    * Diet Brisk Tea
  • Today it's going to be swiss macaroni (whole wheat) and cheese with spinach and grilled chicken. The mac and cheese is made from a mix I picked up at Target and then I bulked it up with a lot of spinach and threw in some chicken.
  • Today was scallops served on a spring/herb mix with pearl onions, grape tomatoes and red peppers. YUM! Working from home today, obviously.
  • OMG...what a question!! My job is in the sky and thus I eat a LOT of lunches packed "to go", but they don't come from my kitchen...which can really be a challenge!!!

    Protein is important to keep me full. And I try to stick as much as possilbe to complex carbs. I like single cottage cheese packs with some fruit. Or maybe a slice of ezekiel bread with almond butter and an apple. There are no microwavess on the airplane, so it's usually pretty simple stuff!! Today I am in Germany and I had a premade garden salad from the store. I threw some precooked/packaged shrimp on top with olive oil that i carry in a leak proof bottle and some lemon. YUMMY!!!
    I'm glad you asked the question...I'm always looking for ideas myself!! There are too many tempataions onboard if I don't have food in my bag!!! (Hence many of these extra pounds I'm carrying!)

  • I like this thread for lunch ideas so I'm bumping it back up!

    Today is broiled mahi mahi, fruit salad and cottage cheese. It looks a lot like an old lady dieters plate that I used to serve when I was younger and waitressed at a country club. Blech.
