  • Like Mandalinn, lunch is whatever dinner was the night before.

    It beats frozen prepared foods, and I know I don't add chemicals or preservatives to my food.
  • I will often pick out a recipe I'm interested and make four servings of it on the weekend, then package it individually for lunch during the week. For dinner, I'm cooking for the two of us and I have to find recipes we both like. This way I get to make recipes that I like but I my SO doesn't (he's on his own for lunch).

    I also have several favorite wraps or sandwiches that I make regularly for my lunch.

    And I love to pound a chicken breast flat with a meat mallet, then saute it and serve it with a sauce of some sort (e.g., marinara) or stuff it with reduced fat cheese, herbs, and fruit or veggies and broil it. I eat it with polenta (pre-cooked from a tube) and sauteed spinach.
  • Most of the time I will have a lean cuisine..Once in awhile I will have a tuna sandwich on lite italian bread or a chicken sandwich
  • I eat 1/2 cup black beans, half a cucumber, a tomatoe, 1/4 cup 2% shredded cheese, 2 mushrooms and lite creamy ceasar dressing
    or Dunkin Donuts egg & ham on english muffin
    or Mcdonald's chicken sandwich with ketchup and mustard instead of mayo (they usually know it's me in the drive through when they hear that order I think) :-)
  • Yesterday and today I had lite peanut butter and sugar free polaner all fruit spread sandwiches. I usually do not eat sandwiches but I had the most awsome craving for it. I bet this is the first time in 4-5 years I ate a PB & J! They cost me about 320 calories so I can not make a habit out of it...

    I usually eat some soup at lunch.
  • today i went to walmart and got luna bars (they were on sale for 75 cents so i just bought the entire case of 15!) so that is what i had for lunch. 180 calories and full of protein and other vitamins that i'm usually lacking, according to fitday =)

    note to self: go shopping for healthier food. this house is FULL of tempting junk. i'm sure my dad's girlfriend would appreciate it too since everyone in this house is now on a diet haha
  • I alternate between a lean cuisine (the brick oven pizzas are awesome) and salad. For my salad I mix together spring mix lettuce, cucumbers, tomato, and my dressing of olive oil, red wine vinegar, grey poupon, garlic, and pepper. It's yummy!
  • Today I'm having a boca burger (100 calories) on two crustless pieces of whole wheat toast (60 calories) with, on one side, a laughing cow cheese wedge (35 calories) and on the other, a tablespoon of barbecue sauce (25 calories). This combination has become a favorite of mine recently because it's very tasty and filling for only 220 calories. =)
  • MMM! This thread is making hungry for lunch although I just had lunch.

    Today was spicy steamed shrimp on spring mix with blueberries, green onions and a few walnuts. Topped with some really good savory dressing, Woodstock by Annie's Naturals (which is tahini and tomato I do believe).
  • Today I had keilbasa sausage (A BIG NO NO, HIGH IN FAT/CALORIES) I only had 10 minutes at lunch time and DH already had this made at home when I got there....OH WELL!!!
  • I have been having a chopped salad with any veggies I have,even if not my favorite, I chop up so small I don't taste it, I add chicken breast or a boca burger and use salsa for the sald dressing because I don't like many unless full of fat.Another lunch, boca burger ,1/2 c black beans and 1/2 c salsa on top.
  • As others do I make more than a dinner amount in the evening and take leftovers for lunch most days. When I don't have anything I usually grab a veggie burger and pick up a salad at the co-op. I keep a bottle of lf dressing in the fridge at work.
  • More often then not I have Subway. I have a 6" parmesan and oregano bread veggie sandwhich, no cheese, tons of veggies, vinigrette and pepper.

    Subway is just around the corner at work so it's convenient, cheap and delicious!
  • - three bean salad + cucumbers + cherry tomatoes + corn canned + lemon and olive oil dressing.
    - wasa crispbread with grilled eggplant hummus.
    - turkey on whole wheat with loads of veggies and mustard.
    - greek salad made of cucumbers, romaine, tomatoes, black olives, thyme, l/f feta + lemon and oil dressing (my fav!)
    - 1/2 a grilled chicken breast wrapped in a pita bread with tzatziki sauce (yogurt and shredded cucumbers and a hint of garlic) with a small green salad.
