Trish, my dh has severe fibromyalgia, and I have Chronic Fatigue Syndrome and am hypothyroid, so neither of us have energy a lot of the time.
What works for us is that, whenever I *do* have the energy to cook something, I try to make extra, and freeze some of it for another meal. Every once in awhile I can end up with three or four dishes in the freezer that we can just take out and cook when we don't have energy to cook something else.
I also try to keep pizza makings on hand so I can slap together a pizza for us, since that doesn't require much energy.
There are also a lot of nights when we'll just make a quick sandwich for supper, or nibble on a plate of whatever we happen to find in the refrigerator that doesn't take preparation: cheese, olives, and crackers, for instance.
Most of all, we've gotten over any feelings of "guilt" that we're not making a meat-and-potatoes meal every night.

I'm feeling frustrated today. I've started walking/wearing my pedometer for the last week or so again. Most days I've ended up with a minimum of 5000 steps, and up to 7000 steps on some of the days. After a winter of sitting around most of the time, you'd think this walking would be helping me lose a few ounces--but nope! I'm going UP the scale again. Story of my life. Grrrr.
