Pinky, hummous is not on the P1 list as it is made from garbanzo beans/chick peas and is a high starch/carb with the addition of fat - this can be tricky even in maintenance but definitely a no-no in P1.
I ate stir fry home made Chinese food A LOT! But I love it anyhow and still eat it a lot. Fry up veg in your oil allotment for the meal, add cut up chicken breast, pork tenderloin, or beef (and a bit of ginger fresh or powdered), a bit of Bragg's Aminos or soy sauce, and Frank's hot sauce or Chinese 5-spice powder and you are good to go. Quick & easy and you can do up a bit of rice or noodle for the rest of the family to eat with theirs.
My favorite packet was Wildberry Yogourt drink (sweet) and Broccoli Cheddar Soup (savoury). I had limited choices as I have to be gluten free and not all the packets are.
