I love sushi
However I didn't love the expense of buying it so I make my own. Very simple and I know exactly whats in it. They work out at about 60 cals per piece (thats one nori sheet rolled up and cut in 6 portions).
I generally use avocado, salmon (or chicken/tuna) and cucumber as a filling and serve with soy sauce and wasabi. I do use sushi rice but you can use aborio at a pinch. It just needs to be a short grain rice as they are more glutinous and tend to "stick" better and a good rice vinegar/seasoning.
I actually made some just on the weekend as I was having a few friends over for drinks. I should have made a double batch cause they were gone in a flash!
