Yeah! I love egg-white omeltes, I eat a huge one daily. Try egg beaters or egg starts. Egg starts has different varieties of "pre-mixed" omelets with veggies already in them, they're super easy to make (all you need is a bowl and a microwave). They're about to release a ham and cheese verjin if they havn't already, with just five more calories per serving. And to make omelets even better, try having them with sugar-free maple-flavored syrup (I LOVE Mrs. Butterworth's SF syrup. It's has to most similar texture to regular syrup). I also enjoy them with different fillings like spinache (like a quiche), salmon, cloves, and cottage cheese. Adding one chopped black or green olive does a lot as well, it adds nice little olivy-bites throughout the eggs.

And about the carrot comment: The nutrients in carrots outweighs those few little carbs. And if you've eaten enough high-cal foods to become overweight, a carrot is nothing to fear. Stick it next to brocolli, and it may seem sugary. Stick it next to say, a snickers bar, and suddenly not so much.

We're already avoiding foods that aren't healthy, like french fries and cakes and pies and cookies and out&out junk. Good grief, why in the world would we avoid a perfectly healthy food such as carrots???

carrots have carb but most of it is in the fiber form which is good carb! I like soya scrambles with red peppers,onions,celery and mushrooms!

I learned to like a variety of veggies, still won't eat certain ones.

I love scrambled eggs with green onions (scallions), green pepper and tomatoes in them. Add some dill, too, and yum! Now I'm not talking about big quantities of the veggies, probably not even a full serving of them. Maybe 1/3 to 1/2 serving altogether, in 2 eggs.

Anyway, good for you for trying it! Experiment a bit and see which veggies go best in your eggs. Strawberries are also good in scrambled eggs, or in an omelet.
