last night: sushi! mmm we had a girls night and made sushi w/ veggies, boiled shrimp, and tuna.

tonight: A big salad and hopefully fish. BF is out fishing for my dinner right now, then he's going to cook it for me!

Well, tonight I'm having Subway since I don't eat until I gethome from my TOPS meeting around 9pm, and I certainly don't feel like cooking at that time

The other night, though, I made a stir-fry kinda thing that was REALLY good. I cut up a bunch of boneless skinless lean chicken breast into small strips and marinated in teriyaki sauce. Then instead of regular chopped veggies (since I HATE most veggies ), I cooked it with a bag of broccoli cole slaw mix I found in the produce section (thin strips of broccoli, carrot, and red cabbage). I cooked it all together in my wok with teriyaki sauce, and YUM! I didn't even make rice or anything with it because the strips of broccoli were like semi-crunchy noodles when it was done, so I just served it in bowls. SO GOOD--and quick and easy!

last night i had a veggie burger on sprouted wheat bread (w mustard, pickles, and gouda), some lf cheez-its, a glass of apple/carrot/celery/mustard green juice, and a rice krispie treat. tonight i'll probably have a tuna sandwich and more juice.

I'm trying something new tonight, hopefully it will be pretty yummy. I found these low carb pitas at Publix that have 9 grams of fiber and 11 grams of protein for only 130 calories. I am going to take one of those and make a calazone with some reduced fat mozzarella cheese, green peppers, onions, etc. Cut them in strips and dip them in marinara sauce... should be good!

i'm making chicken and cheese (low fat) quesadella's. they are so good and not to bad if you use the lowfat cheese and spray instead of butter!
