I was going to mention this as well!!! Making your own Kale chips at home are so easy and so much cheaper than buying them! I even add some different spices, like chili powder or onion powder, to give them a bit more satisfying flavor!

I second the sugar snap peas - they're portable, require no prep whatsoever, and are delish!

Thank you guys for all the great suggestions!! I'll do sugar snap peas next, and look into making kale chips. I'd also forgotten about sun-dried tomatoes and dried peas.

I love those little multi colored bell peppers - just hold the stems and eat around the seeds.

I'd be careful with dried veggies- esp. sun dried tomatoes, they can be high cal. Can you bring a little tupperware cup of dressing/dip? I agree with grape tomatoes...they're super good. Especially if you brought a string cheese along with them and ate a bite of string cheese and then a little tomato. You can also stuff pea pods with ff cream cheese or light laughing cow or something if you have the time in the morning and then eat like a finger food.
