I use olive, canola, or coconut oil. I know WW doesn't consider coconut oil one of their 'healthy oils' but I do and I count it as such. Coconut oil is solid at room temperature and is so good when you use it to fry eggs or saute vegetables. It is also 1 point per tsp.
I'm usually good at all of the GHG with the exception of the oil. I have to try harder to make sure I get it in. The dairy I usually take care of with milk in my cereal in the morning and a yogurt for a snack.

Or you can roast them in the oven with a little bit of olive oil/kosher salt/cracked pepper/maybe rosemary. I love to do this with butternut squash, brussels, carrots, and especially potatoes! SO GOOD.

We do that too! My favorites are potatoes and asparagus.
