Ya I know I should sleep, I've always been an up all nighter since I was born, my dad is just like me with the sleeping, guess that's where I got it from, lol.
I have to take my vitamins, maybe cook or boil some eggs for breakfast along with some broccoli, or just have a yogurt with veggies - haven't decided yet. I have to get some laundry done too, I keep putting it off.

Here's that recipe, since you'd like to see it:
Spinach, Rice, and Feta Pie (Ph2)
2 t. smart balance
3/4 C. chopped onion
2 t. whole wheat flour
1/2 t. salt
1/4 t. pepper
1.5 C. low-fat milk
2 C. cooked brown rice
3/4 C. crumbled feta cheese
1 large egg, lightly beaten
2 large egg whites, lightly beaten
1 (10 oz) package frozen chopped spinach, thawed, drained, squeezed dry
Cooking spray
2 T. grated fresh Parmesan cheese
1. Preheat oven to 400*
2. Melt smart balance in large saucepan over medium heat. Add onion and saute 3 minutes. Stir in flour, salt, and pepper. Gradually add milk, stirring with a whisk until well blended. Bring mixture to a simmer, and cook 1 minute or until slightly thick, stirring constantly. Remove saucepan from heat, and stir in cooked rice, crumbled feta cheese, egg, egg whites, and spinach.
3. Pour mixture into a 9-inch pie plate coated with cooking spray. Sprinkle Parmesan cheese over pie. Bake at 400* for 35 minutes or until set.

Ruth, Do you have suggestions for what to do with a basil plant before it freezes? I had a tiny plant that's turned into a basil BUSH in my front bed. Would like to save it if I can. It won't frost probably until November here but with baby coming I should probably go ahead and do whatever I'm going to do with it.
I think my bra is going to suffocate me today. Sorry for the TMI. I am SO uncomfortable already and it's 8:11!!

Jessie - When I have leftover herbs, I either chop them up and freeze them in an ice cube tray with a little water OR turn them into pesto (with basil). Both ways freeze quite well and the ice cube size makes them perfect single servings!
The bad sleeping usually only continues for a few months after baby is born - DS slept through the night at 2 months (almost 12 hours) and has been a pretty good sleeper ever since - although this sleeping on the floor is wearing my nerves thin.
Have you gotten a bra extender yet? They are available at Target for cheap....they are a godsend. For the last month of my first pregnancy, I refused to wear a bra unless I absolutely had to.

Quick flyby for me too. I'm floundering like a fish out of water this month at work, NOTHING is going right and it isn't helping my motivation. Boss is getting irritated and I can't seem to find the key to jumpstarting things back to life. I don't know if it is back to school time that has things at a halt or people afraid of this upcoming election but something has to give, SOON!

Sleep has been off a lot lately. One more week of this and I'm going to the doctor.
Well, off to take a lap around the office! It's freezing in here!
I was up around 4AM to use the bathroom and had a bit of trouble getting back to sleep but not as much as some nights lately. I think it's stress. Just too much going around in my mind.
My assistant scribe came over last night and we got a LOT done. I've got a lot more printing to do today and then she is coming again tonight for us to work more. Basically we have 56 participant books to create (probably 50 or more pages each) plus staff printouts. Everything has to be cut in half and then hole punched. We are making progress though.
I've been eating well and the weight is finally coming back off. I was actually at 161.5 this morning which is great considering I started the month at 166. It really bothers me that I got down in the 130's at one point and let it creep back on but I will get back down.
Jenny - around here, we do southwest style stuff...a lot. We all really love southwestern style eggs and omelettes. I just cook the egg - scramble or make an omelette and then smother in a mixture of black beans, homemade salsa (or store bought - make sure it has no sugar added), spinach, peppers, onions, etc...
There are times that I mash great northern beans into salads (tuna salad, egg salad, etc.) or throw a handful of roasted chickpeas on a salad for lunch.
We also mash white beans into regular potatoes (or just a plain white bean mash). Add plenty of garlic, salt and pepper. drizzle with a minute amount of olive oil. Also, with the taco bake, I change it up a little. I use black beans and seasoned, smashed lentils instead of the refried beans....a preference in taste really. Whenever we have soups, we always throw in beans....chicken soup with white beans, chili with red beans, stew with red beans, taco soup with black beans, etc.
We also always have roasted chickpeas on hand. They are great when you just need....something...to munch on. You know those times. When you stand in front of the pantry or fridge just waiting for something to jump out at you? They work really well, just salty enough to hit that salty craving...or you can make them sweet with splenda and cinnamon....awesome.
In addition to Zeff's ideas, I like to make 3 or 4 bean salad. And you can't forget Taco Bake. I use fat free refried black beans with that. I also like to take a can of black beans and heat it up with a can of Rotel Mexican and a little cheese and then add some meat.
