  • kathy, i always listened to my mother on the phone, too. when she was finished talking, she was ready to hang up. she wasn't too interested in being the listener. i hope you didn't overdo it today and get too hot. watch out for that.

    i just made asign to post next to the cornbread. WARNING!!! FIRE HAZARD with a pie chart showing red with an arrow pointing to it. curtis drank milk while eating a small piece of this jalapeno cornbread. some of those big "lumberjack" type guys will love this. i have a friend in texas who was upset with her hubby and his buds for drinking too much. they were working an overnight shift at an annual horse show. anyway, they were to have bbq ribs the next day. she loaded the ribs with cayenne. i mean LOADED! to make a long story short--the loved it and she had to make them that way every year afterwards.
  • Well, that's it for me. I'm officially at my goal weight, and anything else will be a bonus.

    I'm changing my tracker to a 145 goal weight. It's where I wanted to go initially (when I was 175) and it was a bit of a pipe-dream to want to go into the 130s. However, if I DO get there, I won't complain ... but I will work to maintain this loss and not gain even one pound above.

    I can wear any medium top on the rack and some smalls, and any size 8 pants and some size 6's. At 5'7", I think it's realistic.

    So ... maintenance it is.

  • I had to laugh at you doctoring up the cornbread. Last weekend I made homemade salsa because my avocados weren't ripe yet so the guacamole I had planned on making didn't happen. I only chopped up ONE little jalapeno in the tomatoes, and a whole bunch of purple onions, and they were PANTING after eating it. I didn't have any because I was busy making the other stuff, but there was none leftover so it must have been good.

    The sign is hilarious!
  • Kathy, Sandra, help me! A question for you...I am making a new recipe that calls for 5 oz. tomato paste. What I have is 8oz. tomato sauce. Do you think that will work? It's for a casserole type dish. THANKS!
  • Kathy, I think 145 is a great goal...especially because at 5'8" I'll be happy with 160! But seriously, you look great and sounds like you can wear whatever you want!

    Sandra, you are so hilarious. The bread does sound like it would set you on fire! But it sounds good. You are one prepared woman for this bbq.

    DH is working on making built-in shelves for our LR. It's a long process. I've been getting stuff ready for the yard sale we are having next weekend with ILs. That's a lot of work too.

  • Okay, you have sauce and it wants paste. I'd say if there is other liquid in the recipe, you'd cut down a little on it.

  • Here's what I'm making (except I'm making it with rf cheese instead of ff and using lean ground beef instead of soy crumbles). I'll let you all know how it tastes!

    Bean Burrito Casserole (Core)

    Servings | 8

    main meals | This recipe is Core. Only count points if on the Flex Plan. Tastes like the filling of a yummy bean and cheese burrito, without the flour tortilla!

    Ingredients

    1 pound meatless soy crumbles
    1/8 cup reduced-sodium taco seasoning (1/2 packet)
    3/4 cup water
    15 oz canned yellow corn, no salt added, drained
    14 oz canned diced tomatoes with green chilies (mild)
    15 oz fat-free canned refried beans
    5 oz tomato paste
    2 cup ff Shredded Cheddar Cheese
    4 cup cooked brown rice
    1 medium onion(s)

    Instructions

    Dice onion and saute in large skillet with soy crumbles (or use 1 lb of Core acceptable ground meat). Add water and 1/2 packet of taco seasoning. Simmer until sauce thickens. Add canned veggies, tomato paste and beans. Spray a casserole dish and fill with veggie/bean/soy mixture. Top with 1 c. of shredded nf cheddar cheese. Cover with cooked brown rice. Sprinkle remaining cheese over top. Bake covered at 350 until heated through, 20 min. Remove cover and continue baking until cheese is melty, 5 min.

    I just realized (after it was too late) that I only made 2 cups of rice (4 servings) instead of 4 cups of rice (a whole box!) like the recipe calls for. Well, we'll see how it goes!
  • Okay so here's the review...
    ...it was quite tasty! But it was a whole lot like my mexican goulash recipe, but more difficult (not that it was hard, just in comparison there was more to do.) But I do recommend it. However, like I said earlier, I didn't use FF cheese. It was good and made plenty for LOs. I see tomorrow's lunch...
    Anyway, I recommend it. Next time I make it I will probably add more taco seasoning and/or chiles. It wasn't very spicy. Of course I was using a previously opened bag of taco seasoning, so maybe there wasn't exactly 1/2 bag there.

  • we're home. sure had fun. the "HOT" cornbread was a huge hit. one of the guys kept half of what was left. his wife said he had breakfast plans for it. YIKES!

    vickie, did you have your "tea"? i had 2 margaritas. that was the only non-core thing i had so i'm not feeling too bad. i am estimating 10 pts according to cfc. if i stick to no more than 5 waps a day the rest of the week, i'll be all right. how was your party?

    melissa, i'll bet it's good with less rice. i don't think it would make any difference. i normally use a lot of picante in my mexican dishes. do you think that might help? i hope to make this tomorrow.

    nikki, your post makes me smile. it's supposed to be that way when grandma comes, isn't it?

    kathy, where are you? you're not out in the heat, are you? there was a man at the party from texas. he's an outfitter who guides several of the guys from here when they go south to bowhunt. small world.
