Default Yummy eggplant

I found a really good healthy to cook eggplant:

Cut an eggplant into circles, and cut the skins off. Soak the medallions in milk for about five minutes and saute them in a small amount of olive oil and garlic for about five minutes. I never liked eggplant before, but this was really good, and healthy. Olive oil is really good for you too. It has the kind of fat that lowers cholesterol.

I tried this and it was good... I kept the skins on too I sprinkled a tiny bit of parm cheese on it as ti was cooking... Very yummy

Not dousted in FAT eggplant:
-1 eggplant
-garlic/oregeno seasoning
-PAM spray
1. Get a cooking pan and cut eggplant into rounds or length wise.....
2. Place on cooking pan after sprayed with PAM spray
3.Sprinkle seasoning generously on eggplant
4. Bake at 375 for an hour or...broil for about 15 min(until you can smell them!)
--LET COOL and enjoy(salt helps!!)

Two eggplant recipes that sound great!! I'll be trying at least one of them this week. I love eggplant -- so filling, too -- and I've been looking for new, low-fat, low-cal ways to make it. I would never have thought of milk.
