I'm pretty sure when it comes to Cool Whip, you can either get sugar free or fat free--not both (and all Cool Whips, to my knowledge, have trans fats also, even if it doesn't say so on the label--check the ingredients).
Also, do you mean canned pumpkin pie filling, or just plain canned pumpkin? I would think canned pumpkin pie filling would have the evaporated milk and sugar already added, which could add fat and sugar.
Not trying to discourage you on your dessert finding--just don't want you to think it's perfectly healthy to have in large amounts every day
