Default This Week's Healthiest Food - Bell Peppers

I eat a LOT of these. I throw them in stir-frys, I roast them, I put them on subs (subs made at home and I always get them on my Subway subs as well), throw them into my pitas, into scrambled egg whites, anywhere they'll fit. I also like cutting them in half lengthwise and filling the cup halves with goodies, such as other veggies, brown rice, cooked orzo, lentils, etc, and baking them in the oven. I buy all colors; green, red, orange and yellow. But my favorite is still the classic green.

What's your favorite way to fix bell pepper?

Yum - peppers are one of my favourites. Unfortunately, they're just too expensive at the moment to buy - budget is very tight.

I love to: cut them into strips and just eat them. Sometimes, I'll dip them into some hummus. Tossed through a salad they're divine.

My favourite way is to roast them with some tomatoes and then make a soup from the roasted veg. Absolutely divine!

I love peppers. I like the red ones best, but use all the colors.

I slice them and broil them. Along with onions and eat it together with grilled chicken cutlets.

SOmetimes I'l just eat the plain broiled pepper.

I use them lots in just a regular salad. And in other "fancier" salads as well.

I slice them, dip them into a little hummus.

I stuff them with tuna.

There's lots of uses for them. Great stuff.

I love peppers! Green are my favorite. I love to make stuffed green peppers. I also put them in stir fry, salads, subs, sandwiches, eggs, you name it. Lastly I eat them whole as a snack.

Peppers are my fav, especially the red ones. I roast them with basil and olive oil and then put them in my big bowl of quinoa I make every week.

I used to hate bell peppers. Then, for some reason about a year or so ago, I started loving them! I'm not sure why. Green is definitely my favorite, though.

I love to make a greek pita and stuff it with grilled chicken, grilled green bell peppers, cucumbers, a little feta and/or salad dressing. YUM!

I also love stuffed peppers. There is an Italian restaurant that we go to where they halve the pepper, stuff it with this really yummy meatball mixture, and bake it. I make the healthier version at home (turkey sausage and reduced fat cheese).

For some reason, I just love the way green bell peppers smell! Mmm!

love red peppers, think green peppers are foul. But its ok cause any recipe that calls for green, I just put in red

I put bell peppers in practically everything. They are one of the few vegetables that I buy without knowing for sure how I'll use them. My SO won't eat mushrooms; bell peppers are one of my standard substitutions for mushrooms. I use them to add more volume to recipes (salads, stews, soups, casseroles, stir-frys, sautees, egg dishes, etc. etc) without adding a lot of calories.

A couple of weeks ago I made Eggplant-Pepper Sauce (except I broiled and peeled the peppers and baked the eggplant instead of microwaving both). It was easy to make, quite tasty, and very low in calories (I think around 60 calories per serving). I ate it over chicken and polenta.

I also like to saute them with some onions and eat them on sandwiches or with chicken sausage.

I love bell peppers, roasted, sauteed, grilled, stuffed, every which way. The green ones are OK but I prefer the more colorful ones. I heard that green bell peppers are just unripened peppers, the orange/yellow/red/etc are fully ripened. I suspect this is why you sometimes find peppers at the market that are a mix of green and another color, they must be partially ripened.

That aggplant/pepper sauce sounds very similar to the ajvar I make (recipes are at the bottom of the linked page). Now that I have a grill I make this all the time, it is sooooo good! I usually use about half the amount of oil called for.
