I love hummus, of course, but I also really like them curried over brown rice. I also like them in salads, soups, tossed with pasta; the options really are endless.

I love chickpeas. I make hummus and falafel pretty often, but the falafel I make from a box (click here http://sweetbippy.blogspot.com/2006/...l-follies.html if you'd like to know why. Kitchen disasters, humph! )

I also like to make chana masala http://www.3fatchicks.com/forum/show...53&postcount=8 and spinach chickpea leek soup http://sweetbippy.blogspot.com/2007/...sible-pie.html.

I love hummus and home made falafel (although I have also had the same dissolving experience as Shananigans--my solution has been to brown them in a non-stick pan with just a little oil or spray and then to finish them in the oven. They're SO much yummier than the boxed falafel). I don't eat a ton of beans, however, because they're quite high in calories. I should probably reevaluate.

I love hummus and eat it about once a week. I really have to portion it out, because I could definitely overeat it. I love chickpeas as well, in salads or just plain. I love their taste and texture. But like Baffled, I find them too high in calories. I like to spread my calories out over the course of the day, so I tend to stick to lower calorie items.

Default Curried Garbanzo Bean Recipe

Here you go Emily (and everyone interested.)

Make sure the spices are as fresh as possible (especially the ground coriander) it makes for a better curry.

Curried Garbanzo Beans

3c Cooked garbanzos
1T oil
1t each ground coriander, ground cumin, tumeric
1/4t cayenne pepper (more if you like it hot)
1/2t each ground cloves, ground cinnamon, ground ginger
3 cloves of garlic, minced
2T fresh lemon juice
1-2T fresh cilantro, chopped
1 large diced tomato
salt to taste

Heat oil in a pan; cook spices and garlic over low heat for a few minutes. Stir in garbanzos and add enough liquid to barely cover (be careful not to add too much or you may need to cook longer.) Stir well; mash a few beans with a fork (or masher.) Cook beans over medium heat for 20 mins, or until sauce thickens. Salt to taste. Remove from heat and stir in lemon juice, cilantro, and tomato.

For 4 servings: 278cals/8g fat/42g carb/12g fiber/13g protein

For 6 servings: 185cals/5g fat/28g carb/8 fiber/9 protein

Enjoy!

I did a search, I just typed in Recipe for Garbanzo bean burger, a bunch came up. Here's one. I certainly can't vouch for it, since I've never tried it. It does sound yummy though.

2 cups mashed garbanzo beans (chickpeas)
1 stalk celery, diced
1 carrot, grated
1/2 onion, minced
1/2 tsp garlic powder
1/4 cup flour
salt and pepper to taste
oil for frying
PREPARATION:
Mash together all ingredients, except oil, thoroughly. Form into patties and lightly fry on each side in oil until golden brown. You can also barbecue these veggie burgers on the grill.

I have the book "Vegan with a Vengeance" and it has a pretty good vegan casserole with broccoli, garbanzo beans and carrots.

Ooo... I keep meaning to buy that and Vegan Lunchbox (not vegan, but I like the food.) Do you like the book? Are there a lot of good recipes?
