Default This Week's Healthiest Food - Cauliflower

One of my favorite vegetables.

There are sooooo many health benefits to this beautiful stuff! It's funny I found cauliflower staring me in the face when I went to check the healthiest food's list because I have a head of it right now sitting on my kitchen counter, ready to be cleaned and prepared for my lunch!

Again another of my favorite veggies. I like it raw with a little bit of ff ranch, in a salad, or with some hummas. Also I like it cooked boiled with a pinch of salt.

I like to roast it at 450 degrees with a little sea salt and olive oil. This is a favorite for the entire family!

Ahh, LLV, we've had this conversation before.

It is my favorite veggie. I go usually go through 3 heads a week. At a mere 28 calories per cup you can eat a real lot of it at a time. This is a good thing for me. I find it so filling, it keeps me satisfied for hours. If there's one food that I credit for helping me out with my weightloss it would have to be hands down cauliflower.

I cook it in a little chicken broth for about 6 or 7 minutes. I hate it when it is over cooked and mushy.

I don't like it raw either. The roasting method sounds good, I think I will try that. Thanks Slimlindy.

And yep, I agree, you can eat a LOT of it and fill up. I cooked a head yesterday and then mashed it (I love mashed cauliflower) and couldn't eat the whole thing, so I just polished off the rest of it a few minutes ago along with a Boca burger on a whole wheat bun and I'm stuffed!

I'm like that with a few things too. Broccoli is a half & half; I can eat it cooked but not raw. Then there are the greens - like collard and turnip greens, kale, etc. Can't eat that stuff.

I'm a little bummed. I didn't get my cauliflower this week. Went to the store this morning and over to the produce to grab my cauliflower and it's $2.99 a head!

So I passed this time
