Happy Birthday, a little early.

Since you don't want a regular salad, how about a light pasta salad, made with whole wheat pasta, halved grape tomatoes, green onions, seeded, chopped cukes, a few ripe olives, a dash of fresh Parmesan, and some lf Italian dressing? Add other veggies as you like. For the main dish, you could marinate some fish, chicken or turkey, and either grill it, or bake it. If you don't want to marinate it, get creative with some herbs and spices for flavor. You could serve some lentils or wild rice on the side. Fresh veggies abound right now, so take your pick, and serve plenty of "free" ones. For your cake, how about an angel food one, with fresh fruit on top?

Here's hoping you have a wonderful birthday!

You should really considered a cake made from a box of cake and a can of diet soda. It's so good!

True! I make one with sf orange jello and sf orange Sunkist, and nobody knows it's points-friendly. I'll see if I can find the link....

Edited to add: here's a link to the my post from 2003.

Oh, yes! That cake is so good! I made it for dh's family reunion and everyone loved it.

Now I want to branch out and try some other ideas with the diet soda and sf jello. I'm sure there are a lot of possibilities.

But that one, it did taste just like a dreamsicle/creamsicle .

As for your meal, I'm loving the idea of a healthy pasta salad. Also, steamed/boiled/grilled shrimp and grilled lean steak would be yummy!! Not too hard to make, and yummy

Happy Birthday on Friday!!

Thanks, Jenn! I also make this cake with sf lemon jello and one of those "to go" individual packs of Crystal Light lemonade mixed in 12 oz. of water. Very good, and summery, too. My husband, who is a lemon freak, loves it.
