Ingredients:
- 1 cup of quinoa
- 1 can of black beans, drained and rinsed
- 1 red bell pepper, diced
- 1 cup of cherry tomatoes, halved
- 1/2 cup of corn kernels
- 1/4 cup of fresh cilantro, chopped
- 1/4 cup of fresh parsley, chopped
- 1/4 cup of red onion, diced
- 1/4 cup of olive oil
- 2 tbsp of red wine vinegar
- Salt and pepper to taste
- Cook the quinoa according to the package instructions.
- In a large bowl, combine the cooked quinoa, black beans, red bell pepper, cherry tomatoes, corn, cilantro, parsley, and red onion.
- In a small bowl, whisk together the olive oil, red wine vinegar, salt, and pepper.
- Pour the dressing over the quinoa and black bean mixture and toss to coat.
- Serve the salad at room temperature or chilled.
