Seriously, what I would probably do (because I'm annoyingly anal about sticking to weigh-in dates and numbers and stuff) is record what it says today because it's your official day, but you'll know in the back of your mind that yesterday it was lower, so maybe at the next weigh-in the numbers will be even better because that two pounds will come back off in addition to whatever else you lose between now and then. Does that make sense? Probably not

but that's how I think. Just little mind games I play with myself.
