So does anyone know, if you signed up for a plan (one of the most expensive) and haven't officially started yet, and decided you want to do a different plan, will they let you change?

They have changed my meal plan twice now, but the price is the same no matter what I think.

Same here, I have changed plans twice also and they never charge differently
