I will give the parm. chicken a try. I don't like cheese but parmesan is not so bad. I try making the chicken in a skillet and I think that is one of my problems. LaRee, I know exactly what you mean about a buddy. My fiance` is a chef, but one of those skinny ones you shouldn't trust. He can eat anything he wants and it never shows. He quit smoking about 18 months ago and still didn't gain anything. He said the other day he had gained weight. All of like 4 pounds!! If I didn't love him so much I might have to hurt him. I've tried to buddy up with a couple of other girls on here, but it just never seemed to work. I've been goofing off and not following plan 100% and I need to buckle down and just get it done so I can move on to stabilization and maintenance. I would really like to have someone that would keep me accountable. If you are up to making a committment, I'll do the same. What do you say.
If you are looking to cook your chicken the easy way, which to me is in a skillet on the stove, pound the breast flat between plastic wrap until it's about 1/2" thick. Season it with whatever you like. You can make bread crumbs with you starch at dinner or melba toast. Sometimes I will use the bread crumbs, mix in taco seasoning, coat then use the olive oil to lightly fry it, finish it in the oven with green chili's or jalepeno's on it. I love spicy so I have to try and get it in somehow.
