So I had my "lean" for lunch at work today, and my "green" at dinnertime at home. It was just a simple salad of spring mix and mushrooms. I had several lemons leftover from a party last weekend, so I decided to dress the salad with the juice of 1/2 a lemon, a drizzle of EVOO, salt, pepper, and garlic seasoning mix. OH MY!!! Who knew simple fresh lemon & oil was sooo good - not me!!!
And this week I found a new shop nearby that sells all kinds of infused olive oils and balsamic vinegars. I bought basil oil, chipotle oil and lime oil, and honey-ginger white balsamic, coconut white balsamic, and blackberry-ginger dark balsamic. I've cooked my MF eggs in the basil oil - so good! I can't wait to make a salad now - coconut lime vinagrette, anyone? Or maybe blackberry-ginger basil dressing?
