Question about a recipe...

  • Blueberry Lemon Muffins

    1 package Medifast Blueberry Oatmeal
    1 package Medifast scrambled eggs
    2 packages Medifast vanilla pudding
    1 1/2 c water
    2 packets of Splenda
    1/2 t baking powder
    pinch of salt
    1 Tablespoon grated lemon rind
    1 Tablespoon cinnamon

    Whisk well and let sit for about 15 minutes. Whisk again and pour into 8 sprayed muffin tins.

    Bake in a 350 oven for about 40 minutes, or until toothpick comes out clean.

    Serves 4. Refrigerate unused portions and eat promptly.


    Anyone think I could make this with egg beaters instead of the MF Eggs?
  • I think you would have to decrease the water quite a bit
  • Hmm, the only thing is that this is my last week officially on Medifast but I have left over packets and I don't want to waste any. Maybe I'll muck around with it.
