Thumbs up Bread Pudding for breakfast

This is a recipe I had from WW and it works here.
I really like this and it taste like you are eating dessert for breakfast.


2 slices of lite bread
1 egg, beaten
add to the egg 1 Splenda packet, cinnamon to taste, and 1/2 to 1 tsp vanilla
scald 1 cup of skim milk
slowly add it to the beaten egg mixture, pour over bread that you have broken into pieces.

I bake it in the microwave for 5 minutes. It is really very tasty. I let it cool before I eat it. I also have made it the night before so I could put it in the refrigerator and eat the next morning.

That sounds really good Linda. In the microwave, do you cook it on high or some other setting?

Gayle I microwave it on high for 5-6 minutes. If I bake it it is at 350 for 30 to 35 minutes. I usually mic it as I do not want all the heat in the house.
