Default How can this carb count be right ????

Hello All.

New to this Forum & was browsing the recipes and found this one under Chicken, how w/ all the potatoes can this be 1 carb ??? As I said I'm new to this so if it's a dumb ?, I'm sorry

Porcini Roasted Chicken

1 1/2 cups hot water
1/2 cup dried porcini mushrooms
1/2 cup grated fresh Parmesan cheese
1/2 tsp. rubbed sage
3 Tbsp. dry white wine
1 (5-pound) roasting chicken
6 medium red potatoes (about 2 1/4 pounds), quartered
1/8 tsp. salt
1/8 tsp. pepper
2 Tbsp. all-purpose flour
1/4 cup dry white wine
1/4 tsp. salt
Combine water and mushrooms in a medium bowl; cover and let stand 30 minutes. Drain mushrooms into a sieve over a bowl, reserving 1 cup liquid. Rinse and finely chop mushrooms. Combine mushrooms, cheese, sage, and 3 tablespoons wine; stir well. Preheat oven to 450*F. Remove the giblets and neck from chicken; discard. Rinse chicken under cold water, and pat dry. Trim excess fat. Starting at neck cavity, loosen skin from breast and drumsticks by inserting fingers and gently pushing between the skin and meat. Spread mushroom mixture beneath skin on breast and drumsticks. Lift the wing tips up and over back, and tuck under chicken. Place chicken, breast side up, on a broiler pan. Place potatoes in a bowl; coat with cooking spray. Sprinkle with 1/8 teaspoon salt and pepper; toss well. Arrange potatoes around chicken. Insert meat thermometer into meaty part of thigh, making sure not to touch bone. Bake at 450*F for 30 minutes. Reduce oven temperature to 350*F and bake an additional 1 hour and 15 minutes or until thermometer registers 180*F. Discard skin. Place chicken and potatoes on a serving platter. Set aside; keep warm. Pour pan drippings into a zip-top plastic bag. Snip off 1 corner of bag; drain into a medium saucepan, stopping before the fat layer reaches the opening. Discard fat. Combine flour and reserved mushroom liquid in a small bowl, stirring with a whisk; add to pan drippings in saucepan. Stir in 1/4 cup wine and 1/4 teaspoon salt. Bring to a boil; cook 1 minute or until thick, stirring constantly with a whisk. Serve with chicken and potatoes.

that is a very good question!! I for one don't have the answer though. I believe potatoes are definitely more than 1 gram of carb! Not counting the flour, wine, mushrooms and cheese.

Are you sure you were looking in the Low Carb Recipes forum? It sounds more like a Weight Watchers Recipe to me. The WW recipes are in a different area than the Low Carb recipes. I just did a quick scan through our Low Carb Entrees and I couldn't find this recipe.

I'm guessing it means 1 carbohydrate exchange (or whatever WW uses)...i.e. it counts as 1 carb serving for the day under WW, not as 1g carbs.

They WW count a certain number of carbs to equal 1 carb point. Check out the low carb recipies there are here. and several links for books of low carb recipes. there will be some thing there that will hit the spot.

Good thinking or you would have had a red potato !!!

Well I was right the carb count was wrong

I emailed them , and they replied w/ in an hour WOW !!! & they already corrected the error to read 31 carbs ( I was so impressed by them )..........I'm so glad because they had a lot of GREAT recipes w/ good carb amounts under all categories wooo hoooooo

That's also a low FAT recipe site, not low CARB, but there probably are some good low carb recipes among them. It's gotta be good because it's in the 3FatChicks forum.
