Tried my meatballs

  • I made them for the party last week. They were ok, about 1/2 got eaten up before I left. I am not a big "meatball" lover, so to me there were okay. Here is the recipe and nutitional value to the best of my calculations!!!!


    2/3 cup A1 steak sauce
    2/3 cup thick and chunky salsa
    1 1/2 lbs ground beef
    1 egg
    1/2 cup bread crumbs

    Blend the A1 and salsa together in a smal bowl.

    Mix beef, egg, bread crumbs, and 1/3 of sauce mixture in a large bowl. Shape into about 30 meatballs. Arrange in a single layer in baking pan. Bake at 425 degrees for 12-15 minutes. Serve with remaining sauce as a dip. (I put cooked meatballs in the crockpot and pored remaining sauce over the meatball and set on low for the party!)

    2.6g carbs
    .06g fiber
    2g protein

    I know the bread crumbs are not "low carb friendly", but I have taken a "be reasonable" approach and try to be low carb and eat "normally". Just trying to find what I can live with! Enjoy if you try!

  • How about instead of bread crumbs use crushed pork skins.
  • Did you use A1, or a low carb substitute? It is pretty high in sugar and could give you a stall...sounds good, though!
  • You can also try finely chopped mushrooms instead of breadcrumbs. Maybe adding in some cheddar cheese. I think it was LindaBC that says she does this for meatloaf and it works very well. The taste is good and if you add plenty of spices, who can tell anyway?
